Being a foodie and sweet tooth I tend to try sweets every time. Though Kala Jamun is one the popular yet delicious sweet of India never imagined about trying at home. But when I found Gulab Jamun instant mix in the fridge which I brought from India got an idea of trying this Kala Jamun.

Almond kheer/ Badam payasam/ Badam ka sheera/ Indian popular easy desserts/ How to make almond sweet pudding/step by step pictures/ Simple desserts recipes
PREPARATION TIME- 10 MINUTES
COOKING TIME- 15 MINUTES
WHAT YOU NEED
Almonds/badam-15-20
milk-3 cups
cardamom powder-1 tsp
ghee-1 tbsp
sugar-3/4- 1 cup
saffron strands-few (optional)
Soak almonds in hot water fr 2-4 hours at least or full night if you have time..Then remove skin and grind them into fine paste.
Now Heat a pan with 1 tbsp ghee and add thsi ground almond paste.stir well and add milk.
Keep it in low flame and stir in between to avoid burning..When the milk reduced to half quantity add suagr amd mix once again well..
Add cardamom powder after 5 minutes and when the kheer is in thick consistency turn off..Take it into serving bowl and after few minutes refrigerate it for 1 hour minimum..
Serve chilled with topping of almond flakes...
MAHAS NOTES
Use full cream milk..along with almonds take some cashews for rich taste.
Try with condensed milk for rich sweet taste..
Stirring is important in the process.

GAVVALU/SWEET SHELLS/TEEPI GAVVALU/DEEPAVALI SWEETS/SOUTH INDIAN FESTIVALSWEET RECIPES/EASY INDIAN DEEP FRYING SWEETS FOR KIDS
GAVVALU means shells...The recipe which we are calling as GAVVALU looks like this(below picture) cowrie shells almost.That`s why we call these as GAVVALU...This is one of the indian traditional sweet recipe which we often make on festival times....Usually I use gavvala chekka/gavvala peeta to make These sweet shells..If you don`t have this no need to worry.You can use a clean comb or fork also..Here I used maida to make these sweet shells,but some people also makes with rice flour and wheat flour too.. and instead of soaking them in sugar syrup you can use jaggery syrup..Using sugar syrup is quite normal.Even I also used sugar syrup here..We can prepare two types of shells.One is with sugar and the second is using chilli powder in hot version..Both versions are very good snack for kids..
WHAT YOU NEED
Maida/APF-1 cup
cardamom powder-2 tsps
ghee/neyyi-2 tbsp
salt- 2 small pinches
gavvala peeta or cleaned comb or fork
oil-for deep frying
FOR SUGAR SYRUP
water -1/2 cup
sugar- 1-1/2 cup
HOW TO MAKE
Take flour in a bowl and add ghee,salt..Mix well and by using enough water make it like a soft chapathi dough..
Keep it in rest by covering with damp kitchen towel for 20 minutes.
Now heat kadai with enough oil for deep frying.keep this in low flame.
then once again knead dough with oily hands for 5 more minutes and divide into 3-4 portions.
From one portion of dough take a marble size dough ball and press it on gavvala peeta or comb or fork with thumb finger and roll it..You can see the shape(lines) on back side of the dough ball.
Like this prepare all shells and arrange them on paper.
Mean while take sugar and water in a bowl and prepare syrup..
Check the oil and start frying dough shells.deep fry them in medium flame until the shells turns into golden brown color.
Don`t load kadai with lots of shells at a time also fry carefully.
Once after deep frying well,drain them on a paper towel to remove excess oil.
Check syrup this time,if it ready turn off flame.
When you start frying third batch, soak the first deep fried shells in syrup..
The most Important step is after pouring shells in syrup you should stir it well.Other wise,syrup may crystallize on top of the shells.
So,stir well and remove them into fresh bowl and again pour remained deep fried shells.
Finally,store them in box and serve as snack.

CHANNAR PULI/PANEER GULAB JAMUN/FOR MY SPECIAL FRIEND VIJETHA
It was a draft post which is in sleep mode for a month...Almost every week I checking out the preview of this recipe and don`t know why I postponed all the time..Ya..This is the recipe which I tried for my friend who is called Vijetha..Her birthday was on august 28th and the same week I made this jamuns to wish her through my blog.But,some how missed up..OK..It was past...and better to talk about present...
The only friend of mine is vijetha here in Brasil..She invited few times to home when I was new to this place..After that we became a good friends,actually she is very friendly and also very talkitive person like me.so we both never feels bore in spending time.She is also a very

PREPARATION TIME-20 MNS
COOKING TIME-1 HOUR
WHAT YOU NEED
Condensed milk-100 gms
home made paneer( I used ricotta cheese)-125 gms
maida/all purpose flour - 3 1/2 tbsp
baking powder-1/4 tsp
ghee-1/2 tbsp
sugar-2 cups
water-1 1/2 cups
HOW TO COOK
Mix water and sugar in a bowl and heat on..add cardamom powder and let it boil..Once sugar syrup is done keep the bowl in rice cooker bowl and put it in warm mode..
Grind into fine which given above-from condensed milk to ghee.This should be sticky and loose.
Then keep the ground mix bowl in fridge for some time..after that remove out and start shaping balls.
Heat oil for deep fry..and fry balls 5-6 at a time and load pan with too many balls.
Keep flame in medium always and fry very carefully.Once done,change these fried jamuns into sugar syrup..
MAHAS NOTES
First time I poured extra/some more condensed milk and turned paneer batter like syrup little bit..So,you should be careful while adding..
Refrigerating for some times is easy to shape the balls..
If the mixture is too thicky add 1-2 tsps of maida..
Sugar which I used is not too sweet in taste.So used 2 full cups..
Using fresh home made paneer tastes best for this recipe.but I used ricotta cheese and came out well too.
Need lots of patience to fry the jamuns well..If the heat is high, jamuns may change the colour out side.but inside they will be raw..
Those kind of uncooked jamuns may not absorb the sugar syrup and over all your work will be flop.
