Ragi Payasam | Healthy Finger Millet Kheer With Jaggery | Sankranthi Recipes | South Indian Popular Festival Recipes | Easy Healthy Payasam Recipes


CATEGORY- HEALTHY LOW CALORIE SWEETS/DESSERTS/PANDAGA VANTALU
PREPARATION TIME- 10 MINUTES
COOKING TIME- 20 MINUTES


WHAT YOU NEED

ghee/clarified butter -2 tbsp
cashews,almonds - 5+5
raisins,chironji nuts -5+1 tbsp
cardamom powder-1 tsp
milk-1 cup (if you like add 1/2 cup more,but adjust jaggery)
water-3/4 cup
ragi flour/finger millet flour- 1/2 cup
jaggery/bellam- 3/4 cup


HOW TO COOK

In a non stick pan heat ghee/clarified butter and fry chopped cashews,almonds,raisins,chironji nuts in low flame and keep them aside.

Now in a vessel heat water.While water boiling add ragi flour slowly and cook for 5 minutes in medium flame..Now add in milk and stir for 5 minutes in low flame again.

Now add jaggery and cook in low flame until turns thick...Turn off and add fried nuts...

Serve warm or cold...



MAHAS NOTES

You can add coconut milk for a change..

Along with nuts fry coconut pieces.

Add jaggery 1 cup for more sweetness if you like.

Careful while adding flour..Otherwise,it forms lumps..

Almond kheer/ Badam payasam/ Badam ka sheera/ Indian popular easy desserts/ How to make almond sweet pudding/step by step pictures/ Simple desserts recipes



CATEGORY- DESSERTS/SWEETS/KHEER RECIPES
PREPARATION TIME- 10 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

Almonds/badam-15-20
milk-3 cups
cardamom powder-1 tsp
ghee-1 tbsp
sugar-3/4- 1 cup
saffron strands-few (optional)

HOW TO COOK

Soak almonds in hot water fr 2-4 hours at least or full night if you have time..Then remove skin and grind them into fine paste.

Now Heat a pan with 1 tbsp ghee and add thsi ground almond paste.stir well and add milk.

Keep it in low flame and stir in between to avoid burning..When the milk reduced to half quantity add suagr amd mix once again well..

Add cardamom powder after 5 minutes and when the kheer is in thick consistency turn off..Take it into serving bowl and after few minutes refrigerate it for 1 hour minimum..

Serve chilled with topping of almond flakes...



MAHAS NOTES

Use full cream milk..along with almonds take some cashews for rich taste.

Try with condensed milk for rich sweet taste..

Stirring is important in the process.

Beet root Poha kheer/Beet root rice flakes kheer/Beet root atukula payasamstep by step pictures/Healthy low calorie kheer recipes with jaggery


I know,how you people feeling after seeing this recipe name..But,It`s true..it is a beet root poha kheer..I tried on my own idea and I want to make it completely healthy..So,used jaggery and 3% fat milk..payasam got a  lovely pink color because of beet root and in between poha gave a crunchy taste..I really love beets color and often makes juices with it...Pulpy beet roots are lied down in vegetable stand from last few days and i thought to try innovative recipes this time..Poha kheer is a very common kheer which people makes it often in homes on festival times..So,I thought to add poha with beet root and this is the result of my creation..It is very healthy and yummy in taste too..If you are a sweet tooth or loves payasams then try this new combination kheer and enjoy..


CATEGORY- DESSERTS/SWEETS/LOW CALORIE KHEER RECIPES
PREPARATION TIME- 20 MINUTES
COOKING TIME- 20-30 MINUTES


WHAT YOU NEED

Beet root grated or coarsely ground-1/2 cup
thin rice flakes/poha-1/2 cup
jaggery powdered/bellam-3/4 -1 cup
milk-2-3 cups
cardamom powder-1 tsp
dry roasted cashews-5 chopped



HOW TO COOK

Wash twice rice flakes and drain water..Powder jaggery and keep aside.

Heat milk and add jaggery to it..Stir in between to melt it..Then add beet root and mix it..Cook for 3-5 minutes in medium flame by stirring in between..

Add poha and mix once..Cook it for 3-4 minutes in medium flame.stir it to avoid burning milk from bottom..

Add cardamom powder now and fold it well.Cook in low flame for 5 more minutes and turn off..

Add ghee roasted or dry roasted cashews,raisins and almonds.Serve warm or cold..





MAHAS NOTES

Consistency of kheer is depended on using milk quantity.If you want can add 1/2 cup more.But use more jaggery for sweet taste.

Replace jaggery with white sugar.it`s your choice.

Increase or decrease beet root and rice flakes quantity according to your taste..

Peni Payasam/Instant Sheer Khurma/Fine Vermicelli Pudding/Peni kheer/ Fine semiya kheer/Instant Hyderabadi sheer korma/Ramzan festival recipes/Easy Indian Desserts/Step by step pictures/Mother`s day special and wishes to all wonderful mom`s on earth


Sheer khurma is a  fine vermicelli pudding which is prepared by muslims on ramzan festival times.It is a traditional dessert for them and is popular in India,pakistan and bangladesh.It is a combination of dates,fine vermicelli,milk and lots of nuts like pistachios,sun flower seeds and mainly dates.But this is not an exact recipe of sheer korma.It is an Instant recipe.Ya..In my last India trip I purchased some fine vermicelli which is called PENILU in telugu..It is famous in diwali times..To prepare it,need some boiled milk with sugar and then immerse this good amount of Penilu in milk.Then you can have it warmly.But mom told to try this kind of dessert which is almost near to sheer khurma..Near mom`s home we have lots of muslim neighbours and some of them are mom`s close friends  too...They shares special feast in festival times,specially on ramzan time..In that I love sheer khurma which they prepares with lots of nuts and large amount of milk.Truly their foods tastes amazing..
   Coming to this recipe,while arranging my indian food packets in cup boards,I remembered mom`s idea and then implemented soon.I added only cardamom powder and chironji nuts this time and other nuts are just absent in kitchen. Still it tasted very delicious because of full cream milk and fresh peni.If you all other which are need for sheer khurma then try this kheer which tastes similar to sheer khurma...Next time i will try it and sure will share here too....Thanks for this recipe mom..I loved it.N HAPPY MOTHER`S DAY AMMA.:)

PENILU
 
CATEGORY-DESSERTS/PAYASAM/SWEETS UNDER 15 MINUTES
PREPARATION TIME- 10 MINUTES
COOKING TIME- 15 MINUTES



WHAT YOU NEED


Penilu/fine vermicelli-1/2 cup(see below picture)
full cream milk-2 cups
sugar-1/2 cup(or as per your taste)
cardamom powder-1 tsp or 2 pods
sun flower seeds/chironji-1 tbsp
*cashews/raisins/almonds chopped and ghee roasted-2 tbsp(but i did n`t added)
ghee-1 tbsp(you can omit too)




HOW TO COOK

Crush the penilu into small size..then using ghee roast it nicely in very low flame.Other wise they may burnt easily.
Then heat milk in woke or pan and start boiling.Then add sugar to it and mix.
After 2 minutes add roasted penilu and start stirring..Do this in low flame.Other wise milk may flow down.
Cook it for 3 more minutes and then add cardamom powder+ sun flower seeds.
After a minute turn off flame and serve.

I Skipped ghee.
Also other nuts which marked with in the list above
Can use 3% fat milk too
Don`t omit cardamom powder
