Phool makhana is also called as lotus seeds or fox-nuts.. These are rich in protein and zero in calories.I have already posted delicious makhana kheer in MLH. It was very healthy and nutritious sweet dish. This time I combined poha along with makhana seeds to make a beautiful dessert.

CARROT HALWA/CARROT SWEET/DULCE DE ZANAHORIA CON LECHE CONDENSADA /CONDENSED MILK RECIPES/HAPPY UGADI ALL....

PREPARATION TIME-15 MINS
COOKING TIME- 30 MINS


WHAT YOU NEED

carrot grated-2cups
condensed milk-1/2 -1 cup
cardamoms-3pods
milk-2 cups
cashews-3
badams/almonds-3
ghee-2tsps
raisins/kis mis-10


HOW TO COOK


Heat ghee in pan and fry dry fruits and keep aside...crush cardamom pods and make into coarse powder.

fry grated carrot in the same pan for 5-8 mins....

add half of milk and cook til evaporated.....now add condensed milk and cook again for 5 more minutes in low flame..stir in between...

add remaining milk and cook in low flame finally...add in cardamom powder now..when its reached halwa (thick) consistency off flame add in nuts n raisins....

Yummy CARROT HALWA is ready now...serve with ice cream.....




MAHAS NOTES

1.If halwa is too thick add some more milk..
2.carrot halwa can make with sugar too..just replace condensed milk with 3/4 cup of sugar.
3.condensed milk measure in your choice..if ur sweet tooth add more..
4.use full cream milk for rich taste..

COCONUT MILK JAGGERY RICE/PARAMANNAM

Whenever i do pujas mostly i makes this coconut milk sweet rice..It is the on of the famous tasty nivedyam/prasadam which distributes in temples.I use always coconut milk for rich taste..Even amma makes this on festivals time but she use normal milk.anyway I like both versions...One thing it tastes best when serve hot with ghee.......I really love the aroma of ghee while eating.......

Ingredients

raw rice-1/2 cup
coconut milk-2 cups
jaggery-3/4 cup
cardamom powder-1/2 tsp
ghee-1/2 cup
raisins-10
cashews-5 chopped


Preparation

Wash and soak rice..keep aside for 15minutes......

Heat 2tsps of ghee in a pressure cooker and fry cashews and raisins...drain these aside..in the same cooker add drained rice and fry for 2-3 minutes....

Pressure cook rice with 1cup of coconut milk for 3whistles......after it cools completely mash rice slightly..

Melt jaggery in 1/2cup of water and boil it for 10minutes or til it reaches one string consistency..

Now add in cooked rice in jaggery syrup add 2tsps of ghee.....In between add ghee til complete.

Add in raisins and cashews finally and serve hot with fresh ghee.....

MAIDA BURPHI/ALL PURPOSE FLOUR BURPHI

This is one of the easy and tasty burphi which i prepared on my little son birthday... I doubled the ingredients and i got almost 40 pieces...i prepared some coconut laddus too....Along with these i bought choco drinks,wafers,fruits... Instead of arranging a party we distributed all these to some kids....

So,here goes the recipe........

Recipe source-YUMMY TUMMY

Ingredients

all purpose flour/maida-2 cups
ghee/clarified butter-1 cup
sugar-1 3/4cup
cardamom powder-1/2tsp
cashews/almonds-5+5 few chopped
yellow food colour-a pinch

Preparation

Grease a plate or baking tray with a spoon of ghee......

Melt ghee in a kadai and fry cashew..keep aside......

Fry flour til light golden colour...... keep this in a plate......

add sugar to the same kadai with enough quantity water and bring to boil......when the syrup reaches to one string consistency add in cardamom powder and colour.........

add flour and stir well for 5-10 minutes.......add dry fruits too.........

when whole mixture starts leaving from pan off flame and remove this into the greased tray....

when cut into pieces and serve.........

COCONUT KAJJIKAYALU | DEEPAVALI SWEETS | SOUTH INDIAN FESTIVAL SWEETS


KAJJIKAYALU is one of the famous sweet in telangana region........we mostly called it as GARJALU.....AMMA makes this mostly for diwali and dasara festivals......and BAKSHYALU/POLI also........(will post it soon)

kajjikayalu are so many types with different filling...........mostly i prefers sooji filling,dry fruits powders stuff and coconut filling.......This time iam introducing coconut filling..........so,here goes the recipe..........

Ingredients

TO MAKE KAJJIKAYALU
all purpose flour-1cup
salt-1 pinch
butter-2tsps

FOR FILLING

fresh coconut powder-3/4cup
cardamom powder-1tsp
sugar-1/2cup
crushed almond powder-1/2cup

oil-for deep frying
Preparation

In a bowl add in flour,salt and butter and make into a smooth dough by adding water........


cover with a wet clean cloth for 20 minutes.....

HOW TO PREPARE THE FILLING

in a pan heat 1 tsp of ghee and fry the coconut powder..........

to this add in almond powder,sugar and cardamom powder too..........

fry this for just 5 minutes in low flame........

stir well to avoid burning the coconut........keep it aside for 10 minutes.

HOW TO MAKE KAJJIKAYALU

Divide the dough into equal size balls in round shape..........

Roll it like puri and stuff the 1tsp mixture and apply the oil to the edge of the puris........

stick the endings of puris and close it and press it lightly..........

Actually i used kajjikaya maker which i have...........it saves the time and gives the perfect shape....(see the below pic)

make like this all.heat oil for deep frying.......

fry 3-4 at a time til light gold on top....

serve the tasty COCONUT KAJJIKAYALU.........
