These are one of the famous south Indian deep fried snack called as chekkalu. usually on festival times, we prefer this snack along with sweets like boondi ladoo or maida biscuits.I have already posted a chekkalu recipe where I have used red chilies for spiciness but here I have used green chilies for spice taste and the result was simply good.

Recently I have started using ragi flour in my kitchen.I brought ragi pearls packets in last year india trip.Every time,thinking to use and forgetting as usually..I also prepared home made ragi flour by sprouting ragi and that post also resting in draft still from last 6 months I think..Yupp.That`s looks likes a long time..New recipes are dominating the old ones and every day postponing the old posts..Definitely will share the home made ragi flour post this month..

I brought chick pea flour from indian last year.I tried few popular recipes and then suddenly stopped using..Even I don`t know the reason about it..Already it crossed one year and started forming weevils..Upphhh!! this pantry beetles are one of the biggest problem in food packets.That too specially in indian food products you can see the formation of this irritating weevils very quickly.

First time,I used raw bananas in kitchen,though I have seen lots of banana plants in foz,never tried to get few.In the present apartment,most of the people are from bangladesh and DH friend wife sent 2 bananas few days back...I have tried curry and this pakoda with those 2 big bananas..These are simple fritters which goes well as evening snack with hot tea..

PREPARATION TIME- 15 MINUTES
COOKING TIME- 15 MINUTES
black eyed beans-1 -1/2 cup
chickpea flour-1 cup
red chili powder-to taste (or 1/2 tsp)
salt-to taste
garam masala-1/2 tsp
turmeric powder-1/2 tsp
cumin seeds-1 tsp
hing-2-3 pinches
curry leaves-few
coriander powder-1/2 tsp
ginger garlic paste-1 tsp
chopped onion-1 small
chopped green chili-2-3
cilantro leaves chopped-fist ful
Wash Black Eyed Beans well and soak in enough water for over night..next day morning pressure cook for 2-3 whistles.Its depended on flame.If the flame is low may takes 10-12 minutes time to cook..But don`t cook too mushy..
Now wait until it release air..Grind black eyed beans coarsely in mixy jar or you can use potato masher also...
**Now take black eyed beans mixture in a mixing bowl..Add in chickpea flour.Depending on the black eyed beans quantity take chick pea flour.the moisture in the beans plays key role to add chick pea flour..**
red chili powder,salt,garam masala,turmeric powder,cumin seeds,hing,curry leaves,coriander powder,ginger garlic paste,chopped onion,chopped green chili,cilantro leaves and mix well..
Make it like dough ball,almost black eyed beans helps to make it like a dough..you don`t need any water..if still it looks very hard add water spoon by spoon..careful while adding,other wise it turns like a lump.
Heat kadai and pour in 1/2 litre oil.. Mean while take a lemon ball size micture and make it like vada.If you like can put a hole in the middle.I skipped it..Prepare all these vadas and place on cover which is coated with oil...
Now check the hotness of oil by dropping a small mixture ball,and if the oil is fine hot,place 3-4 vadas at a time and fry in medium flame..Flip vadas other side and fry until turns golden brown color..
Once the vadas turns crispy remove on kitchen paper towel..Serve hot with ketchup.

Do you love hyderabad cuisine???....If so,then defnitely you`ll like this recipe..It is a very popular deep fry which you can see in marriages and dinner or reception (an evening function which arranges after a marriage)buffet..In our telugu culture usually prefers vegetarian foods in marriage buffet and non-veg for reception..It is a tradition which hindus following from so many years...In the marriage buffet this deep fried bhendi is one of the important recipe..There is blind believe like,Marriage meals means,few recipes are must and you never going to miss them..Along with this,stuffed brinjal gravy(gutti vankaya kura),sambhar,raita/plain salted butter milk,white rice,potato brinjal curry,potato gravy or kurma,spinach dal (palakura pappu),papad,boondi laddu,badhusha,mango pickle and finally papad are the must recipes..Yupp..Iam salivating here while writing all these..Yeah...Though we cook all these in home,the taste of the recipes in marriages and functions is different...When I was in India attended very few marriages and never understood the importance of our hindu traditions,ocassions and realtives..Now,the distance and lonliness showing the value of country and family...Hmmm.Hope,soon I visit my beautiful respected India and my family..Luckily,If I gets a chance to attend any marriage surely will share the food pictures...
CATEGORY- OKRA RECIPES/HYD FAMOUS RECIPES
PREPARATION TIME- 15 MINUTES
COOKING TIME- 20 MINUTES
WHAT YOU NEED
Okra/bhindi/bendakayalu- 20 small and tender
fresh and samll peanuts-1 cup
salt
red chili powder-to taste
chat masala-2-3 pinches (optional)
onion-1 small (optional)
turmeric powder-1/2 tsp (optional)
dry red chili-3
urda dal-1/2 tbsp
curry leaves-few
coriander powder-1 tsp
oil-for deep fry
cashew nuts-few (optional)
Check the okra is fine or not by cutting the tail vth ur thumb finegr..if it chopped off its good to cook,other wise reomve it..
Take okra in colander and wash well under runnig water and let them sit aside for 5 minutes..Then take a fresh kitchen towel and wipe okras well. Chop into1/2 inch size pieces..
Now heat oil for deep fry in kadai and fry peanuts well first..Take then into bowl and start frying okra..Keep flme in low and fry okra until crispy..If you are using cashew fry them also.
Now heat pan and add 2 tbsp oil and saute cumin+red chilli+curry leaves..Then very finely chopped onion..Fry til brown and add deep fried okra,peanuts..Mix well..
Throw in salt,chili+turmeric powders and suate for 5 minutes..Turn off and add chat masala+cashews..COmbine evey thing nicely..
Serve with hot white rice along with sambhar or with curd rice..
MAHAS NOTES
This method work outs if you are cooking for 3-4 members or in small quantity..
Other method is,Deep fry peanuts,okra,cashews,curry leaves,red chili and take all of them in a mixing bowl and add red chili powder,salt,chat masala,coriander powder..Mix well and serve.
Onion and turmeric powder is optional..Chat masala also your choice..
Fry peanuts very well..Cashews gives a rich taste..Don`t miss if you like them in dish.. ( I don`t have them in hand actually,when I tried this)

GAVVALU/SWEET SHELLS/TEEPI GAVVALU/DEEPAVALI SWEETS/SOUTH INDIAN FESTIVALSWEET RECIPES/EASY INDIAN DEEP FRYING SWEETS FOR KIDS
GAVVALU means shells...The recipe which we are calling as GAVVALU looks like this(below picture) cowrie shells almost.That`s why we call these as GAVVALU...This is one of the indian traditional sweet recipe which we often make on festival times....Usually I use gavvala chekka/gavvala peeta to make These sweet shells..If you don`t have this no need to worry.You can use a clean comb or fork also..Here I used maida to make these sweet shells,but some people also makes with rice flour and wheat flour too.. and instead of soaking them in sugar syrup you can use jaggery syrup..Using sugar syrup is quite normal.Even I also used sugar syrup here..We can prepare two types of shells.One is with sugar and the second is using chilli powder in hot version..Both versions are very good snack for kids..
WHAT YOU NEED
Maida/APF-1 cup
cardamom powder-2 tsps
ghee/neyyi-2 tbsp
salt- 2 small pinches
gavvala peeta or cleaned comb or fork
oil-for deep frying
FOR SUGAR SYRUP
water -1/2 cup
sugar- 1-1/2 cup
HOW TO MAKE
Take flour in a bowl and add ghee,salt..Mix well and by using enough water make it like a soft chapathi dough..
Keep it in rest by covering with damp kitchen towel for 20 minutes.
Now heat kadai with enough oil for deep frying.keep this in low flame.
then once again knead dough with oily hands for 5 more minutes and divide into 3-4 portions.
From one portion of dough take a marble size dough ball and press it on gavvala peeta or comb or fork with thumb finger and roll it..You can see the shape(lines) on back side of the dough ball.
Like this prepare all shells and arrange them on paper.
Mean while take sugar and water in a bowl and prepare syrup..
Check the oil and start frying dough shells.deep fry them in medium flame until the shells turns into golden brown color.
Don`t load kadai with lots of shells at a time also fry carefully.
Once after deep frying well,drain them on a paper towel to remove excess oil.
Check syrup this time,if it ready turn off flame.
When you start frying third batch, soak the first deep fried shells in syrup..
The most Important step is after pouring shells in syrup you should stir it well.Other wise,syrup may crystallize on top of the shells.
So,stir well and remove them into fresh bowl and again pour remained deep fried shells.
Finally,store them in box and serve as snack.

ROASTED CHANA DAL POWDER MURUKKU/PUTANALA PAPPU PODI MURUKULU/FESTIVAL SPECIALS
Hey..I find out this recipe in draft...iam só happy to Share this You all.
Here in a chinese shop we get rice flour and Its not too good...I prepared some deep fritters n muruku with that flour.But my bad luck was while doing the deep frying (muruku) splitted and exploded in the hot oil and my hands burnt little bit.I just switched off the stove and ran into hall.After few minutes I entered into kitchen n I was shocked.The tiles of kitchen and stove looking oily because of exploding.Thank god!!I ran away and before going to start the process I said to MAHADEV to sit in the hall.This is one of the big disaster in my cooking history..
Later I had a conversation with my friend Vijetha and told her about the Incident.She said that,she also faced the same situation..And she also gave an Information where I can buy good quality rice flour..POMARE FOZ Is the one of best super market which i visited in FOZ...We can get so many good quality food items like dry fruits,nuts,pure honey,frozen meat,different kind of rice,dals,beans,cereals,whole wheat food items,sweets,munching snacks,chocolates,fresh fruits,veggies and more...The most Important is they have lots whole wheat foods in the store..We couple visits for every two months and last time when I asked for rice flour they said that there was no stock..While roaming in the shop I looked over a rice flour packet and it`s a lebanese product..I have confidence on pomare foz and dared to buy again a new brand of rice flour.
one fine day I started my preparation to make some murukku..For a change I planned to add some roasted chanadal powder..Finally I got these crispy n hot murukku. This time I was very careful while deep frying and luckily it does n`t showed any explodes n other else...Iam not a heart dying snack lover,Even DH also..Just for trail I made these and got beautiful murukkus.So,here is my version of making murukku.Hope you guys will like these...

Check the hotness of oil by dropping pinch of dough..

Once done remove all and place them on a paper..start frying next batch.
Serve hot n spicy muruku with cup of chai..I love the combination of both...
MAHAS TIPS
TIPS TO FOLLOW WHILE MAKING MURUKKU:
Check the heat of oil exactly and start process.If the oil is too hot,muruku will turn in dark brown colour..
When using cumin/caraway seeds slightly powdered them.other wise,dough may stuck in the presser.
Be careful while adding chili powder and salt..Other wise the whole murukus tastes worst.
Try with wheat flour instead of rice flour..(If you like experiments**)
Be careful frying and finally start making muruku when you are in fresh mood n strong .

PEAS PURI | Deep fried Green peas Stuffed Puri
FOR MAKING PURIS
all purpose flour/maida-1cup
2tsps-butter
salt-1 pinch
FOR STUFFING
peas-2cups(i used frozen)
fennel seeds-1tsp
very finely chopped onion-1small
green chilli paste-1tsp
sugar-1/2tsp
salt-to taste
pepper powder-1tsp
garam masala-1/2tsp
in the flour add salt and butter and make into a soft dough by adding water and rest it for 20 minutes....
wash and grind the peas coarsly......
heat a pan with a tsp of oil and add in fennel seeds,onions and grinded peas...fry well
add in chilli paste,pepper powder,salt and garam masala......
mix well and cook for just 2-3 minutes............with this the STUFFING is ready..
divide the dough into puri size balls and roll it in small round shape........
place the stuff about 1tsp and close by sticking the edges and roll it like puri very care fully.......
fry deeply in the hot oil and serve hot.......

My elder son started saying some words from this january....actually he is in bit confuse with languages..telugu(M.T),spanish and portuguese.....Iam really enjoying it allot..but some times feeling tired too.....because each and every word he is repeating continuously and if i don`t listens to him he starts crying.......
