Friday With a Friend 10th Guest Post by Rafeeda AR | Chakkara Choru | Jaggery Rice | Malabar Special Recipes


Hey..How are you all..This year Iam bit lazy in blogging...Hahahhaa..But actually concentrated on few other important things..May be this absence continues this month too..We couple was quite busy in deciding school and finally fixed to "BERTONI" Uppphhh...Such a typical task it is..Don`t know how much my parents suffered to send school 20 years back.I was completely disturbed with syllabus after checking out in Anglo americano and Dinamica..Few friends of DH told that bertoni is good with syllabus.So,finally after checking thoroughly was satisified..Yeah.Bertoni is one of the best school in Foz where teachers concentrates on syllabus mostly instead of leaving children freely...Hope my Mahas Boys likes this new school weather..{M quite tensed about them-of course..Iam the "MOM"}

Coming to the today`s guest post,How should I start the Introduction of today`s guest ? Is she need any words to introduce..I don`t think so.. She is non another Rafeeda AR
rafeeda @ rafee is one the active,friendly blogger..She writes at "The Big Sweet Tooth" which stepped into 3rd year recently..The presentation of posts shows her love on food and she maintains a unique style in posting..Personally I met her in dubai and fell in love with her smile first.Hehehehe..This is too embarassing!!!!! In very short time she got fame,but honestly it`s because of her friendly nature,pure heart and love on friends+food..If I speak like this, I can`t complete in 1-2 paragraphs..rafee..You should excuse on this dear..

Personally,what I want to tell is-Dear..Keep continue this love on food and friends with full of zeal....Keep sharing many more recipes..Beijos to your lovely daughters...All the very best to BST :)


First of all, I am so excited to be here on the space of a dear blogger. Usha is one of those few bloggers whom I have personally met. Despite being thousands of physical miles apart, on her way to her home country, she had stopped over in Dubai and I was pleasantly surprised when she bought along with her a huge bag filled with goodies specially from Brazil to gift me. It made me feel so ashamed that I had nothing to give her, thanks to my tight time schedule. We met up for an hour or so, over a coffee which her husband would just not allow me to take care of and finally when I gifted her with something I could find hands on, she asked me, “Why you are having so much formality?” You can understand how sweet and down to earth she is…

When she invited guest posts as a part of her blog’s third birthday, I decided to chip in and jumped in with my name. Ah, before I go ahead, a brief introduction about myself. My name is Rafeeda, an Indian – to be more specific, Keralite – by nationality but I have lived my entire life in a small, yet well-known country, in the Gulf called United Arab Emirates (UAE). I am a working mother, with two pretty daughters and cooking for me is a stress buster amidst my packed life. I blog at “The Big Sweet Tooth”, which recently celebrated its second blog birthday.  My blog name is very synonymous to my nature – ie. a big time sweet lover!

Before going into the recipe, Usha has given us a list of questions to be answered. Let me ponder over it one by one:



1.      About you, a few words which we don’t know.
Actually, who loves to disclose matters that nobody knows Usha??? Hehe… I am just a simple human being, trying to develop myself as much as I can. I love to smile, whatever may be the conditions around me. But one thing I hate about myself is my anger, since I go totally blind when I get angry! 

2.      3 photography tips and kitchen tips.
I don’t think I am a good photographer at all because I am still learning it all. Three things I like to stick to is: keep it simple, click straight and be patient! Day light is not something that I get, thanks to my work but definitely day pictures look way better than night pictures!
As for kitchen tips, three that I use very frequently: add a pinch of salt to onions while sautéing so that they soften easily; grate coconuts and freeze them in an airtight container, will stay good for months; and remove the crown of green chillies and store them in a clean glass jar, for minimum spoilage.

3.      How to develop blog page to get more views and fans.
Basically, I blog for my pleasure. Sometimes, the hits do bog me but at the back of my mind, I always say “Khalli Walli” – the terms used in Arabic for “don’t mind”! Interaction with your readers is one important technique I follow, I make it a point to thank each and every comment on the blog. Visiting fellow blogger’s pages and commenting on them is another way of getting in views, but the majority comes from the non-blogging community. I normally don’t share my posts on a lot of FB share pages or otherwise, mainly as I don’t have the time to do so, but am happy with the way my blog is going – though it’s literally snail pace! J

4.      How the blog has changed your life and how many blog posts you do a month.
The blog has changed my life for good. If you go to see, my page doesn’t have just recipes but a lot of insights of what I experience day in and day out, little titbits I like to collect, a lot of philosophy gathering around our Holy Quran and the Prophet’s teachings. I look at my blog as an outlet of myself and therefore, it has made me a much calmer person than I used to be! I blog upto five posts a week and most of the months I have blogged on an average of 22 posts, though I am expecting myself to slow down in the very near future, thanks to tighter schedules!

5.      Finally, a few words about MLH.
I have already told about the person behind the blog! MLH clearly shows the zest of cooking by this lovely lady. I always ask her, who eats all your cakes and desserts! She has an amazing array of them on her blog. Not to mention about her one-pot rice meals, chicken curries, and what not! The only thing is that hope she keeps her enthusiasm and keeps posting more for us to refer to and derive ideas!

Phew!!! Tough interview that was, Usha… hehe… OK, now while trying to think what to give Usha who has covered such a wide variety in her blog, my only thought was to give her a very traditional recipe from our part of the world – famously called Malabar, which I was sure would not be on her blog! The recipe I am sharing today is called “Chakkara Choru” – which just means Jaggery Rice. It used to be made in our homes, and many Moppila (Muslim) households during Baraat – which is the 15th day of the month of Shaaban in the Islamic calendar – but once we learned that it was an innovative practice, we stopped making it or treating the day as special. I would not like to dwell around this practice as it is still a very controversial matter.

Coming to the recipe, umma used to make it long back and it was one of the recipes that she stopped cooking as well, one among a long list. I made sure to note down the ingredients at least so that I could make it when I feel like having. Umma, just like many of our mothers I am sure, was a person who always went for gut instincts as far as the proportion of the ingredients was concerned. I have just tried to make it as per proportion so that it becomes easier to cook. This can be served for a quick breakfast or relished with a cup of hot chai during the evenings. It is a nice comfort meal at its best… Off to the way I make it…

Chakkara Choru ~ Jaggery Rice
Serves 2


Ingredients:

¾ cup pachari/ dosa rice
4 pearl onions, roughly chopped
¼ tsp fennel seeds
4 tbsp coconut, grated
100 gm jaggery (use more for sweetness)
2 ¼ cup water

Method:

Wash the pachari well and drain. Mix the rice along with all the ingredients in a pressure cooker. Close the lid and cook on high for one whistle. Keep flame at the lowest and cook on simmer for 15 minutes. Switch off and allow pressure to go by itself. Open the lid, give a good mix. Serve warm!

Notes:

1.      You can cook this on a stove top as well. Keep cooking till the water drains and the rice gets all mashed up.
2.      I used the light colored jaggery and that’s why my chakkara choru looks whitish. Normally, the dark jaggery is used. If using, then melt it in the water, strain for impurities and then add it to the remaining ingredients.
3.      The best is to serve it immediately. As it sits, it tends to thicken. Add some water and cook on low flame till the consistency is reached.

Microwave mysorepak/ How to make mysorepak in 5 minutes using microwave/ Easy microwave mysore pak recipe with 5 ingredients/step by step pictures


This is the last recipe of this diwali...Iam very happy to share easy ,tasty festival recipes in MLH with you all..I wish you each and every one a very safe and glowing diwali...I hope you all celebrating with full of fun and happy....Enjoy and careful with crackers...:)



Coming to the recipe,It`s one of the popular indian sweet which people loves to make in festival times..More than that,It`s DH favorite sweet...yeah....He loves badusha and mysore pak in our indian sweets..Yupp.but my bad luck,whenever I tries badusha,always disappoints me..Last 3 months back I think,tried mysore pak.just with a small neglegency recipe was flopped .Actually I followed all the important steps ,but in the final missed pouring mixture in bowl without making late..So,i didn`t get particular shaped sqaures,but the mixtire was tasted simply awesome...after that I never even thinked about it,because of it`s rich ghee quantity and this diwali reminded me again..after trying microwave version besan laddu,got an idea of trying mysore pak too..So,immediately,browsed on web,Got some useful links and followed chitra n aarthi spaces as it is..It`s a simple process,very easy to make,no heavy work,no mch time.All you need is ingredients and 5 minutes time...

I was so curious to know the result, of mysorepak,also was bit tensed too.I love sweets,but the ghee quantities of the recipes pulls me back to try..So,this  mysorepak made to feel shiver while trying,but it made me to feel so happy after the trail and the pieces are just perfect...If you follow the steps carefully,definitely you will enjoy the tasty mysorepak....So,just go with the recipe and enjoy happily...


WHAT YOU NEED

Besan flour/chick pea flour-3/4 cup
ghee/clarified butter-1/2 cup
powdered sugar- 3/4 cup
milk- 1tbsp
cardamom powder-1 tsp
microwave safe glass bowl


HOW TO COOK

In a microwave safe bowl take 1 tbsp ghee and add flour..Microwave it for 1 minute or until flour roast...U can smell the nice aroma of besan flour..

Then remove and take it into abowl..

Now in the same micro wave safe bowl add ghee,sugar,cardamom powder and mix...

Add roasted flour +milk and mix with spoon nicely without ..

Microwave the bowl for 3 minutes first..You can observe the bubbles in the flour mixture and it turns little bit thcik.

So,again microwave it for 2 minutes and now it turns completely hard..

That means your mysore pak is ready now..

Put slices with knife and after few minutes take them into plate and serve.




MAHAS NOTES

better to check for every 2 minutes..It can be done in 4 minutes also.

Don`t microwave for more than 4-5 minutes..the mixture will burn..

Microwave capacity is different for each one,so careful.

Roasting flour gives a nice flavour to mysorepak.

Don`t skip milk and cardamom powder.

Peanut burphi/ Sing pak/Peanut fudge/3 ingrdients peanut sweet fudge/Easy diwali sweets for kids/Indian famous festival reicpes/step by step pictures


Today`s recipe is peanut burphi..Well,peanuts are my favorite favorite most favorite nuts whcih i like to munch any time.Either it roasted peanuts,salt peanuts or if it is folded in any food..What ever it is,,I love to bite them any time..You know..Still now,some times If i craves to eat some thing I prefer to fill my tymmy by taking jaggery and peanuts in the same quantity .It is a very good combination to eat ,but not too healthy..Remember it...Yesterday ,posted peanut sweet balls recipe,which is no needed any cooking process..But can`t store those laddos for a long time,because of coconut and after thinking well mind forced me to try this peanut burphi which is very easy to make and the shelf life also quite big..It is a not big popular festival recipe,but for growing children these burphis are good to grow with healthy vitamins and nutrients...Try for kids specially, instead of enjoying them with store bought goodies and artificial color loaded foods..

PREPARATION TIME- 15 MINUTES
COOKING TIME-  25 MINUTES


WHAT YOU NEED

Peanuts-1 1/2 cup
sugar-1 cup
cardamom powder- 1 tsp


HOW TO COOK

Dry roast peanuts in pan and remove skin...Then after few minutes, grind into coarse powder.Apply ghee on plate and keep ready .Then, in another pan take sugar and water..

Let it boil until syrup forms...syrup should be in one string consistency...When you touch the syrup,it should form in string in between fore finger and thumb.Add cardamom powder and mix..

Then add peanut powder, and stir continuously...keep flame in low,and don`t stop stirring..Other wise it may burn..

When the mixture starts leaving pan turn off and add it into ghee greased plate..Spread it evenly..Put some slits in sharp knife..

After few minutes, separate slices and serve...




MAHAS NOTES

Don`t grind peanuts into very fine powder..you can`t fry well..

Sugar quantity is depended on your choice..Add 1/4 cup more if you like..

You can add anu chopped nuts in syrup..

After few hours ,burphi turns dry n hard..can store for 10 days in room temparature..

5 ingredients sweet burphi/Milk powder maida burphi/ Easy indian festival sweets/ Easy diwali sweets/ How to make maida fudge/Step by step pictures


Iam not a big pro in making burphis..very long time back tried all purpose flour burphi and itcame out very well.Actually except me there is no one in the home to eat sweets or sugar foods..recently my little one started giving company who suffers with cough after having tiny pieces of sweets or chocolates...Well,even though I don`t have people to eat in home,tried this burphi for blog purpose...I want to share at least few recipes these days,which are related to this biggest festival..I hope my step by step images may helps you all to go with the recipes...

Well,coming to the recipe it is a burphi which is made with maida and milk powder...Already many other people shared maida burphi and milk powder burphi recipes,,Even I  too first planned to make milk powder burphi,but later after thought to mix maida to make it creative...There is no much difference in the making process in between maida burphi and this.So,if you are sweet tooth and searching for easy recipe,must try this...it may take around 25 minutes and the ingredients are so simple which we use in regular cooking..Try it and let me know...

PREPARATION TIME- 15 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

Maida/all purpose flour- 1 cup
milk powder-1 cup
sugar-1 cup
cardamom powder- 1tsp
red or orange or yellow food color-2 pinches
ghee-1/3 cup (optional)



HOW TO COOK

Sift flour and milk powder in a plate..add sugar in pan and add enough water.. until sugar covers.

Then let it heat until syrup forms..add cardamom powder+food color and mix once.When the sugar melts completely take a drop with spoon and check it by taking into your thumb and for fingers..if it forms like string,then the syrup is ready..

In the next second,pour flour+ milk powder mixture and stir continuously..after 3 minutes add some ghee and mix without stopping until it forms like soft dough..when the mixture starts leaving pan add some more ghee and stir it well again..turn off after 3 minutes and change this on ghee greased plate..

Spread it evenly and let it cool..after 5 minutes suing sharp knifes cut into pieces..later after some time separate the pieces and serve..

MAHAS NOTES

This is my own idea of making burphi by mixing two main ingredients,so i was bit excited while making..

Well..i this kind of burphi plays main role,but I skipped it,,still got a good shaped,tasty burphis...So,it`s your choice of adding or not...

You can try this only with maida in the same process..For 1 cup maida-1 cup sugar works out well

The measurements are perfect and burphi tasted good with mild sweetness.

If you are too sweet tooth add 1/2 cup more sugar..Remember there is difference in between white sugar and granulated cane sugar.

Strring is important,otherwise it may burn from the bottom..

Adding color is optional and you can add any nuts or saffron strands and rose water in syrup for rich taste.

 sugar syrup consistency plays a main role in this recipe where you should be ver careful...I used sweet milk powder,so added less sugar..So,sugar quantity is depended on milk powder sweetness.

Don`t use a bowl to make syrup like me,its difficult to stir after adding maida mix..Use wide non stick pan and stir immediately without stopping..

If it is the first time don`t panic and careful on each step for best result...

Sago carrot kheer/sabudana carrot payasam/tapioca pearls carrot kheer/saggubiyyam carrot payasam/carrot javvarisi kheer with jaggery


I like sago/sabudana..........Amma rarely uses sago in cooking.....but i started using after coming here only.......I tried twice sago kheer and posted in blog too....This time for a change i added some carrots and instead of sugar added jaggery...if you are sweet tooth like me,start using jaggery more in the place of sugar...OK..check recipe and let me know how is it?

Ingredients

sago-1/2 cup
jaggery-1 cup (12 cup more if you are sweet tooth)
carrot coarse paste or grated-1/2 cup(i used paste)
cashew-5
cardamom powder-1 tsp
raisins-5
almonds-5
ghee-2 tbsps
milk-1/2 ltr
cardamom powder-1 tsp


HOW TO COOK

Wash and soak sago for 30 minutes..

Heat pan with 2 tsps ghee and fry cashews,almonds and raisins.Chop and grind carrot coarsely or grate it if you like.

Now add remained ghee in pan and roast carrot...then add milk and stir well..

Now add soaked sago and mix well.After 5 minutes add coarsely ground jaggery and fold it every thing well.

Add cardamom powder and cook for 10 minutes in low flame by stirring in between..finally add dry fruits n nuts..

 Turn off and serve warm or cold...It`s delicious....
