RIDGE GOURD ROASTED CHANA DAL CHUTNEY/BEERA KAYA PUTNALU CHUTNEY/RIDGE GOURD RECIPES/SOUTH INDIAN CHUTNEY RECIPES FOR RICE N ROTIS
Ridge gourd is one of the healthy vegetable with no calories..This chutney may sounds weird but really this combination works out well..To use roasted chana dal I experimented this chutney and it tasted good with hot white rice..To be honest,long time back I also tried one more combination which tasted nasty..Hehehe..N the combination was cabbage and roasted chana dal..Don`t know the exact mistake about this trial,but it tasted weird..Some times it happens.:)
Any way try this ridge gourd and roasted chana dal combination and let me know about the result...If any one of you tried with any other vegetable please leave in comments.Sure I will try it...:)
CATEGORY-CHUTNEYS/RIDGE GOURD/ROASTED CHANA DAL
PREPARATION TIME-15 MINUTES
COOKING TIME-20 MINUTES
WHAT YOU NEED
Ridge gourds-2 med size
putnalu/roasted chana dal-1cup
salt- to taste
green chilli-3-5
tamarind paste-1/2 tbsp
TO TEMPER
oil-1+1/2 tbsp
mustard seeds-1tsp
cumin-1tsp
urad dal-1-2 tsp
chana dal- 1tsp
hing- 1/4 tsp
curry leaves-1 sprig
dry red chilli-2
HOW TO COOK
peel the skin of ridge gourd if you like other wise wash well and cut into medium size pieces...
Heat a kadai with 1/2 tbsp of oil and fry pieces by adding enough salt til soft.Next add chopped green chili too.cook for 2 more minutes.keep aside these..
Now dry roast the roasted chana dal(putnalu) for 2-3 minutes in medium flame then grind along with cooked ridge gourd.
take this in a bowl and put temper in another bowl with given INGS in 1tbsp oil and mix it in the ground chutney..
Serve with rice or rotis.

PUTNALA LADDU/BELLAM PUTNALA LADDU/ROASTED CHANA DAL LADDU/KIDS HEALTHY RECIPES
Here we don`t get Roasted chana dal..So,DH bought from INDIA last time when he visited....Usually I like make chutney for Idlis n Dosas or just grinds into fine along with few red chillis n salt ..A very long time back I made Dosas n Idlis because we people are not big likers of those break fasts.
So, To use dal I searched in google n I saw the pics of laddus n tried in the next hour....Consistency of the jaggery syrup is more Important other wise you won`t get well shaped laddus...Roasted chana dal is very healthy n loaded with proteins.If your kids are sweet tooth then you can feed them with these kind of laddus...
Sugar can also use for syrup but I preferred jaggery n they tasted really good...So,Friends here the recipe goes.Let me know about these......
CATEGORY-SWEETS/LADDUS/ROASTED CHANA DAL RECIPES
PREPARATION TIME-10 MNS
COOKING TIME-20-30 MNS
WHAT YOU NEED
Putnalu/roasted chana dal- 1 1/2 cup
jaggery/bellam- 2 cups
cardamom powder-1 tsp
ghee- 1-2 tsps
HOW TO COOK
Heat pan n add jaggery and add water til it immerse.Take few spoons of water in a bowl n keep aside..
When the syrup starts boiling add cardamom powder..keep the flame medium..
Check the syrup by consistency by dropping the syrup drops in the water bowl..
If syrup forms like a ball then it is ready to use..So,now keep flame in low..
Soon add dal and mix well to coat with the syrup...
Once dal mix with syrup completely,off flame n give good stir finally..
Let it cool for some time then apply some ghee or butter to palms and start making laddus...
That`s it..Yummy Laddus are ready to taste....
MAHAS NOTES
I used less jaggery .U can see the pics..syrup coat is not so thick..
If you want reduce 1/2 cup of jaggery..
I felt after tasted that dry roasting dal before adding to syrup may gives more taste..
