In my radish sambar post mentioned,that Iam going to use brinjal and potato in my kitchen regularly.Already started posting potato recipes and this is the new recipe which I have tried with brinjal recently..I don`t like brinjal curries,even the look of the dish also won`t attracts me..

Stuffed brinjal masala with peanuts and sesame seeds/baingan masala/south indian popular masala stuffed baby brinjal gravy/step by step pictures
PREPARATION TIME- 20 MINUTES
COOKING TIME- 30 MINUTES
baby egg plants/brinjals-8-10
red chili powder-to taste
salt
turmeric powder-1/2 tsp
oil-2 tbsp
curry leaves-few
dry red chili-2
tamarind pulp/paste-2-3 tbsp
TO ROAST AND GRIND
oil-1 tbsp
onion-1 small
ginger garlic paste/GGP-1 tsp
poppy seeds-2 tsp
sesame seeds-2 tsp
coconut powder-1 tbsp
peanuts-2 tbsp
cumin seeds-1tsp
coriander seeds-1 tsp
HOW TO COOK
Heat pan with oil and roast all the ingrdients in pan by adding one by one which given under "TO ROAST AND GRIND"
Saute for 1-2 minutes and grind into fine smooth paste by adding some (around 1/2 cup) water.
Wash brinjals well and make deep slits lengthwise..Soak in salt water to avoid changing color..Now heat on another fresh pan with oil and saute brinjals until turns tender n soft..
Add 1 more tbsp oil and add red chili,curry leaves..Add fried brinjals and saute well.Then add ground masala paste n tamarind paste.Add around 1/2-3/4 cup water and mix every thing and cover the pan n cook for 15 minutes in low flame.
Serve hot with white rice or rotis..

VANGI BATH/BRINJAL RICE | Kids lunch box recipes | Easy brinjal recipes
Brinjal..i cook very less in my kitchen...
...sorry to say -I dont know why...
i avoid this vegetable to eat or cook..even my hub too dont like this one..
..In brinjal recipes i prefers to eat and cook mainly and mostly only one dish that is GUTTI VANKAYA KURA......
The name it self mouth watering.
.i just love the filling of the brinjal
..and iam proud to say..my amma is an worlds best expert in doing this gravy.......now she is in india....i miss u amma.

As i said in many posts i just loveeee to try the rice recipes...this time i added brinjal.......and the name called vangibath....very unique name.....
....Asusual other recipes Its very very simple to make and yummy toooooo.....
.
cooked rice-2cups
brinjal/egg plant-1big
onions-1big
greenchillies-4
oil-2tsps
turmeric-1/4tsp
salt-to taste
curry leaves-1spring
Ings-1
whole garam masala powder-1tsp OR
(cinnamon-1inch piece
cloves-3
cardamom-1
staranise-1
bayleaf-1big)
Ings -2
VANGI BATH POWDER
urad dal-1tsp
chana dal-1tsp
coriander seeds-1tsp
cumin-1tsp
red chillies-2
dry coconut powder-2tsps
lemon juice-1tsp(opt)
wash and cook the rice and keep it aside..dont over cook the rice and separate the rice grains using fork..........
in a kadai heat 1tsp of oil and fry the the ings -2 under the list til they turns to light golden brown.....
after cools grind it into fine powder...
now in the same kadai add other tsp of oil and Ings-1..saute for half min...
add chopped onions,chillies,salt and saute for 1min..add in brinjal pieces and turmeric too.
now add the vangibath powder and mix it..cook til brinjal turns to soft.......
after brinjal cooked completely off the flame......add in rice and mix all together carefully.......
add lemon juice before serving..
serve with any side dish or raita..........
NOTE
prepare the vangi bath powder in a huge amount and store it......
U can skip the lemon juice if you dont like......
for the rich taste fry the cashews in 2tsps of ghee and add in rice.........
If u are using masala powder(i used)add to the brinjals after they cooked...

Brinjal peas curry for rice n rotis/south indian veg curries/step by step pictures/vankaya batani kura
We have lots of vegetables to prepare a count less variety of dishes..Actually I don`t like brinjal,even DH also avoids it..Typical family..Brinjal curry os a common recipe which is cooked with onion n tomato..Here I added peas with brinjal. This curry well goes with rotis n pulkas..try this..here it is
CATEGORY- VEG CURRIES
PREPARATION TIME- 15 MINUTES
COOKING TIME- 20 MINUTES
Ingredients
brinjal-1big
green peas-1 cup (frozen I used)
onion-1 small
red chilli powder-1 tsp
green or red chillies-1
turmeric powder-1/2 tsp
mustard seeds-1/4 tsp
cumin seeds-1/4 tsp
salt-to taste
ginger garlic paste(GGP)-1 tsp
garam masala powder-1tsp (opt)
coriander powder-1 tsp
cumin powder-1 tsp
curry leaves-5
coriander leaves-for garnish
Preparation
1.chop finely the brinjal,onion and green chili.
2.boil the peas for 3mints and separate the from water.
2.heat kadai add oil.when it is little hot add cumin,mustard seeds and curry leaves fry it for 20 secs.
3.add GGP,green chillies,onion and boiled peas saute them for 2mints.
4.now add brinjal pieces,chilli powder,salt,all masala powders mix it well and cover the lid.let it cook for 5-8 mints.add little water if it is too dry.
5.open the lid and see whether the brinjal is cooked completely or not.other wise cook it for more 2mints.
6.if cooked take it into a bowl and garnish with coriander leaves.
7.serve with rice or chapathi.
8.i served it with rice..
