Okra cashew masala/simple Bhindi cashew masala gravy/easy vegetarian side dishes for rice/Step b step pictures/Mahas own recipes

PREPARATION TIME- 30 MINUTES
COOKING TIME- 20 MINUTES


WHAT YOU NEED

 cashew-12-15
 milk-1/3 cup
oil-2 tbsp
onions-1 big
tomato-1 big
red chili powder-1 tsp
garam masala -1 tsp
salt
turmeric powder-1/2 tsp
 fennel seeds-1 tsp
ginger garlic paste/GGP
okra-15-18
cilantro leaves- few



HOW TO COOK

Soak cashew in milk fro 15 minutes and grind into fine paste..Heat skillet with oil and saute fennel seeds.

Then saute onions and til soft and add finely chopped tomato..Mix once..Add red chili powder,salt,turmeric powder,GGP and mix..Cook this fro 2 minutes and add finely copped okra..

Cook this for 5 minutes or until okra turns soft in low flame by closing with lid..Then add ground cashew paste and stir once..

Close with lid and cook for 5 more minutes in low flame..Add garam masala finally and combine well.Turn off and throw some fresh cilantro leaves.

Serve with rotis.rice/pulkas/parathas.

Mushroom paneer spicy cashew masala/Canned mushroom ricotta cheese gravy/Mushroom recipes for rotis/How to make mushroom paneer curry


Paneer gravy or paneer peas gravy is regular natural dish which people cooks often for rotis as a side dish..But,for a variation I added some mushrooms and used cashews which soaked in milk for 15 minutes..The method of recipe may looks like different with our regualr other gravy dishes.But it wroth trying and it`s a perfect dish for rotis and pulkas.Next time when you have some mushrooms try it with paneer.I used canned mushrooms in this,and you can go with fresh ones but it require time to clean..Spices gives a good taste and bleding onion tomato mix into puree gives such a nice grvay look to the dish.Try this reipe once and hope you like it..Also,if you creative or like experiments try it with almonds instaed of cashews for a change..
*I took pictures exactly in the afternoon time at 4pm.It was very hot that day and the day light dominated pics.So,pics are slightly edited in picasa for a clear look...

WHAT YOU NEED


canned BUTTON Mushrooms-15
paneer chopped into cubes-120 grams
onions-2 med size OR 1 big
tomatoes-1 big
chili powder-1 tsp
salt-to taste
milk-1/4 cup
cashews -6
GGP/ginger garlic paste- 1 tsp
turmeric powder-1/2 tsp
coriander+cumin powders-1tsp+1 tsp
garam masala or biryani masala-1 tsp
cilantro leaves fresh-hand ful
oil-1 tbsp+2 tbsp
1.cinnamon stick-1 inch
2.fennel seeds-1 tsp
3.cloves-3
4.cardamom pod-1
5.black cumin-1 tsp


HOW TO COOK

Soak cashews in milk and keep aside for 15 minutes.Chop mushrooms into two pieces and soak paneer in hot water.
Heat a pan with oil  and add ingredients which are given under *oil*.Saute well..

Now add chopped onion and enough salt..Saute til soft and add tomato and GGP and give a good stir..Cook for 5 minutes in low flame

close with lid and cook for 5-8 minutes in medium flame..Add in cashew soaked milk and stir it once.Then turn off and let it cool.blend it into fine puree and  heat a pan with oil again.

Add cumin.lets crack it.then bayleaf...now add sliced mushrooms and saute well.then add paneer cubes and cook for 2 minutes in medium flame.After a minute add in all spice powders-red chili+coriander+cumin powders,salt.mix well..finally add ground onion tomato puree and fold every thing well.

Sprinkle some garam masala and kasoori methi..Mix it well every thing.

After cooking 5 more minutes in low flame add cilantro leaves and turn off.

CASHEW WALNUT SWEET BALLS/EASY LADDU RECIPES/HEQLTHY SWEETS FOR KIDS/NO CALORIES SWEETS/KAJU ACROT LADDU/LESS GHEE SWEETS


This is my very own Idea of making these laddus which are completely healthy and protein packed..It`s a recipe which you can try with smiles on your faces..Because,you can prepare these sweet balls with just 1-2 table spoons of ghee...I soaked nuts in water for some time and you can replace water with milk for rich taste...Cooking process may takes some of your valuable time,but the result will be gorgeous....Those kids who avoids nuts to eat in raw form,sure enjoys this happily...Try next time and enjoy healthy laddus.

WHAT YOU NEED


Cashew nuts-1 cup
chopped walnuts-1 cup
milk-1 tbsp
ghee-1-2 tbsp
water-1 cup
sugar-1 cup



HOW TO COOK

Soak cashews and  chopped walnuts in water and milk for 1 hour..

Then grind into paste..no need to blend fine..should be light coarse..

Heat a big wide pan with sugar with enough water and let it boil.

When it turns changing like thick syrup add in ground paste and stir fastly..

Add ghee and stir continuously without stoping in medium-low flame.

Slowly mixture turns to thick and hard...When the time you can`t stir more stop flame and leave pan for few minutes..

Now check heat of mixture and apply some ghee to your palms and start making balls.

Arrange them on plate and serve...Can refrigerate for 2 days...


MAHAS NOTES

I added 1/2 cup more sugar.So it was too soft and laddu balls was not stiff in shape.

I recommend to add only 1 cup sugar..

Adding ghee is optional and it `s just for taste..You can add only 1 tbsp.

Prepare syrup thickly and then add ground nuts paste...

Never leave pan and never put high flame.
