Hi every one..Hope you all doing great...How you all going spend this weekend??By the way today it`s friday nah...Yeah..it`s a guest post time again..Here Iam with a guest who is a new friend to me..First we met through FB Page and later became friends personally in fb..She is ChitraJagadish...Professionally a doctor,very good friend and apart all of these she is very health conscious..I admired after watching her recipes which are totally less in calories,at the same time perfect in the taste...Is n`t that great when a person cooks with good heart and mind...Though,we met recently,I understood that she is very cool and calm person by nature and treats every one friendly.When I shared about thsi guets post event before starting,accepted my request in few minutes and within few days sent mail.How sweet she is!!! I was impressed with her answers which are very clear and fixed..Thank you Chitra..:)

This is ChitraJagadish from ‘Chitra’s healthy kitchen’. I am a dentist from Bangalore living in London.  I was always away from Cooking until marriage. My husband loves all varieties of food, which made me explore new dishes and that’s how my cooking journey started. With my medical background wanted to know more about health benefits of Ingredients and its calorie content etc., On our wedding anniversary my husband said ‘It’s time for you to share your learning’s and promote healthy eating’. That’s how my blog started with a concept of ‘Recipes for Healthy Living’.





 2. 3 Food photography tips or 3 useful kitchen tips??




1. Arrange the food on a table and add some contrast backgrounds.
2. Have loads of patience while taking pictures and sometimes photography takes longer than your cooking time
3. Using appealing serving dishes makes a difference to the picture.





3. How to improve fans n followers for food blog n food bog face book page??


Continuous Interaction with other food bloggers is the first step. More you interact more people get connected. The more the time you can dedicate the more people you get.
Another important point is ‘Uniqueness in blog’, which will help spread the word and you get to have repeated visitors.





4.How food blog changed ur life?How many recipes you posting in a month approximately and your memorable moments which related to blog??


Food blogging changed a lot within me call it as Patience, Thought process etc.,  Got to meet and know many amazing people and their work in blogging. Exploring new cuisines and the flavours each ingredient adds to food.
I am currently posting 2 recipes /day, which is very challenging. God’s grace and support/feedback from readers motivates me to do.
The first interview published in ‘Smartindianwomen’, when I was less than 6 months to blogging.





5.Finally,tell me few words abt MLH??


MLH am amazed by the kind of verities the blog hosts. The dedication shown by Usha even while at hospital amazed me. I love the cooking tips shared on her page.  The idea of celebrating blogging anniversary with guest posts was a brilliant idea.

Usha you motivating many bloggers and continue to inspire us with your work.

Coming to the recipe-

Pistachio almond Katli with gulkand filling:
My friend Usha of Mahas lovely home approached for guest post to celebrate 3rd blogging anniversary.  I was so happy but was also demented (confused)only thing in mind was to make a sweet dish which is something different from my regular recipes.
Kajukatli is mine and hubby’s favourite but many my blogger friends has already made lovely katlis. So thought about Pistakatli and Badamkatli then amalgamated both and made Pista-Almond mix. However for filling wanted to try new. The Gulkand (Rose Petal Jam)was appealing to me that’s how this recipe called ‘Pista-Badam-Gulkand Sandwich’ created. 

Here the Pista and Almond is powdered and then mixed in the sugar syrup. I just chopped the nuts and powdered them. You can even pre-soak blanch, make a paste and use to make katlis also. Sweet can be manipulated as per the taste and without using gulkandjust pista-almond katli can be enjoyed as it is or can customise the filling as per the taste.



Yields: 8-10
Preparation time: 30minutes
Cooking time: 20 minutes

Ingredients:

For Katli:
·         Pistachio-1cup
·         Almond flakes-1/2cup
·         Brown Sugar-1cup
·         Water-3/4cup
·         Cardamom powder-1/2tsp

For filling:
·         Chopped nuts- 1/4cup ( I used almonds, pistachio)
·         Gulkand- 4tbsp
·         Cardamom powder-1/4tsp
·         Saffron strands-few





HOW TO COOK

Procedure:

For Katli:
·         
      Blend pistachio, almonds in blender/food processor and keep aside.

·         In a pan add water and then sugar and let it boil on a medium flame for 6-7minutes or till the syrup is of one string consistency, while stirring occasionally.

·         Add the ground pistachio, almond powder mix well and cook on a slow flame until the mixture leaves the sides of the pan, while stirring continuously.


       Let it cool a bit then it form the dough consistency..Divide the dough to two and set aside
For filling:


Combine all chopped nuts, gulkand, cardamom powder, saffron strands in a bowl and set aside. (can include extra sugar or sweetner if desired)




Wow..Iam totally loving it..wonderful answers with impressive words..M Touched..Specially,the recipe is just amazing..being a sweet tooth I can`t stop my excitement to try out ,that too which is very healthy..Undoubtedly,Iam going to try this one day,will share it with MLH..

Microwave mysorepak/ How to make mysorepak in 5 minutes using microwave/ Easy microwave mysore pak recipe with 5 ingredients/step by step pictures


This is the last recipe of this diwali...Iam very happy to share easy ,tasty festival recipes in MLH with you all..I wish you each and every one a very safe and glowing diwali...I hope you all celebrating with full of fun and happy....Enjoy and careful with crackers...:)



Coming to the recipe,It`s one of the popular indian sweet which people loves to make in festival times..More than that,It`s DH favorite sweet...yeah....He loves badusha and mysore pak in our indian sweets..Yupp.but my bad luck,whenever I tries badusha,always disappoints me..Last 3 months back I think,tried mysore pak.just with a small neglegency recipe was flopped .Actually I followed all the important steps ,but in the final missed pouring mixture in bowl without making late..So,i didn`t get particular shaped sqaures,but the mixtire was tasted simply awesome...after that I never even thinked about it,because of it`s rich ghee quantity and this diwali reminded me again..after trying microwave version besan laddu,got an idea of trying mysore pak too..So,immediately,browsed on web,Got some useful links and followed chitra n aarthi spaces as it is..It`s a simple process,very easy to make,no heavy work,no mch time.All you need is ingredients and 5 minutes time...

I was so curious to know the result, of mysorepak,also was bit tensed too.I love sweets,but the ghee quantities of the recipes pulls me back to try..So,this  mysorepak made to feel shiver while trying,but it made me to feel so happy after the trail and the pieces are just perfect...If you follow the steps carefully,definitely you will enjoy the tasty mysorepak....So,just go with the recipe and enjoy happily...


WHAT YOU NEED

Besan flour/chick pea flour-3/4 cup
ghee/clarified butter-1/2 cup
powdered sugar- 3/4 cup
milk- 1tbsp
cardamom powder-1 tsp
microwave safe glass bowl


HOW TO COOK

In a microwave safe bowl take 1 tbsp ghee and add flour..Microwave it for 1 minute or until flour roast...U can smell the nice aroma of besan flour..

Then remove and take it into abowl..

Now in the same micro wave safe bowl add ghee,sugar,cardamom powder and mix...

Add roasted flour +milk and mix with spoon nicely without ..

Microwave the bowl for 3 minutes first..You can observe the bubbles in the flour mixture and it turns little bit thcik.

So,again microwave it for 2 minutes and now it turns completely hard..

That means your mysore pak is ready now..

Put slices with knife and after few minutes take them into plate and serve.




MAHAS NOTES

better to check for every 2 minutes..It can be done in 4 minutes also.

Don`t microwave for more than 4-5 minutes..the mixture will burn..

Microwave capacity is different for each one,so careful.

Roasting flour gives a nice flavour to mysorepak.

Don`t skip milk and cardamom powder.

Still I cant believe about this recipe??..Such a simple method which need only 5 minutes to make delicious besan laddus without any fuss.oh..My god..This is unbelievable..Can you believe if i says this is the first time I tried with my own measurements..I know..Definitely,you can`t ...Because already there are so many recipes in the web about how to make microwave besan laddu. Even I too searched in web for microwave version laddu recipe and later after confirming that it`s possible to make,went through the making process with my very own quantities and timings.

Diwali is in few days.Hope you all busy in preparations...Well,Coming to my part,friday afternoon I went under my hernia surgery.Now,Iam in home,taking rest...So,there are no big heavy preparations or works at my home now..I have recipes in draft,will try to post all those this 2 months..Because of this major sugery it must to take rest for at least 2 months..Hope I will be fine soon..Once after settling my health will pop in in your blogs...

I prepared this kheer 2 weeks back and uploaded step by step pictures two days back..When i came to know that MLH page is going cross 15K decided to post it on this special day..Rice kheer is nothing but,rice pudding which is world wide famous..This recipe is in my mind from a long long time and today I made it finally..This is a very simple kheer which goes well in menu under dessert category..I feel even in the parties or get togethers also,it work outs best ..The cooking process is quite easy except soaking rice part..Basmati or sona masoori rice well goes for this rice kheer more than the normal rice...It tastes more delicious when served cool..So,refrigerate it for some time after done and then serve with some finley chopped almond flakes..senyumkenyit..here Iam giving step by step images..check it and go with the recipe if you love sweets.......



Ingredients

basmati rice-1/2 cup
milk-3-4 cups
cardamom powder-1 tsp
cashews+almonds+raisins-1/2 cup+6
finely choppes pistachios-5
sugar-1 cup (to taste)
saffron colour-a pinch(opt)
ghee-1-2 tbsp

Preparation

1.soak rice for 2-3 hours maximum..or atleast for 30 minutes and before going to cook kheer dry it on a fresh cloth.

2.heat a heavy bottomed pan add ghee..roast rice fry for a minute and add  milk.when the milk is boiling add cracked rice..

3.cook this in very low flame.stir in between to prevent burning.when rice half cooked add sugar and cook for few more minutes.or til rice turns soft n mushy.

4.fry cashews,almonds and raisins in 1 tbsp ghee and add into kheer.add cardamom powder and mix it well.

5.decorate with some almonds flakes and pistachios and serve.it looks great.










MAHAS NOTES

Soaking for long time saves cooking time and use basmati rice..

Stir in between to avoid burning and add 1 cup more milk if it is looks too thick.

Dry fruits n nuts gives a good taste..

U don`t believe,,If i tell a secret..(I added 2-3 tbsp honey in the final process..It`s awesome..Try it kenyit)
