SAMBAR


SAMBAR the name itself gives a hungry feeling.kenyit......a cup of rice with sambar with side dish of bhendi fry and a papad.Ah........what a meals na..cium....so many variations are there in making of sambar..This is my version..........Usually AMMAcium makes pappu charu(toor dal in tamarind water) with some vegetables like carrot,brinjal,tomatoes and onions..sengihnampakgigi....Especially the main two veggies are bottlegourd and drumstick....rindu....She says -these two gives the best taste for Pappu charusenyum....

Ingredients

toor dal-1cup
bottle gourd-1/4part
tamarind paste-3tsps
ghee-1/4cup
onions-2big
tomatoes-2big
red chilli-5
turmeric-1tsp
salt-to taste
cilantro-1bunch
curry leaves-5springs
jaggery-small piece
SAMBAR MASALA POWDER-2tsps

Preparation

peel and chop the bottle gourd into finger size pieces.......

combine dal and bottle gourd and pressure cook for 2whistles.........

to the tamarind paste add 2cups of water and keep it aside............

heat a kadai with ghee and fry the mustard,cumin,fenugreek seeds........

add in onions chopped,GGP,red chilli, and fry well.

now add in tomatoes and cook til soft.......

add in turmeric,salt,tamarind water,jaggery and 1more cup of water........

add in this SAMBAR MASALA POWDER and cooked dal+bottle gourd mixture.........mash the
bottle gourd pieces little bit............

now boil this for 5-8 minutes.........

before going to off the flame add in cilantro,1tsp of ghee..........

hot n spicy sambar is ready.........serve with rice or idly...........

Like in india,we don`t have plenty of vegetables in foz..can count the veggies on fingers which available at my place..but,after deciding to use all veggies (which I don`t like even) started trying varieties these days..This radish sambar is one of the popular dish in south india, but most of the people avoids radish because of it`s odd smell.

Raw Mango Rasam | Green Mango Rasam | Mamidikaya Rasam | Pachhi Mamidikaya Charu | Quick and easy Veg side dishes for Rice


It is a very simple rasam with raw mango..In season can make this version often to enjoy mango taste if your Mango lover (like me).. better you should raw mango which is completely tangy in taste.So,before going to start,check out the taste and then proceed..It goes well with white rice along with some dry curry or with potato fry...


CATEGORY- VEG SIDE DISHES FOR RICE
PREPARATION TIME- 20 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

Raw (green) mango -1 big
salt- to taste

TO TEMPER/TADKA/POPU

Oil-2 tbsp
mustard seeds-1.2 tsp
cumin seeds-1/2 tsp
hing/inguva podi-2-3 pinches
dry red chili-4-5
curry leaves-5-6
cilantro leaves-few



HOW TO COOK

Wash,peel skin and chop mango into pieces..Pressure cook with 1/2 cup of water for 10 minutes in medium flame.

Turn off and let it cool,then using potato whisker mash it roughly.Now turn on heat under a non stick pan..Add oil and prepare "popu" by adding all the ingredients which mentioned above..

Saute well and mango mixture..Add around 3/4 -1 cup water to make it thin/for rasam consistency..Add salt as per your taste..

Turn off after 5 minutes..throw some cilantro leaves and serve hot with white rice along with some curry and chutney..

Okra rasam | Bendakaya pulusu | Bhendi cooked tamarind sauce with spices | Easy Veg Gravy recipes For Rice and Rotis




Okra rasam or bendakaya pulusu is one of my mother singnature recipe which she makes often..It is a very simple recipe and easy to cook in minutes..senyum It`s my family favorite recipe in school days..Try it for a change,definitely you`ll like it..


Ingredients

okras-15 medium size
tomato-1 small (optional)
onion-1 big
red chilli powder-2 tsp (to taste)
salt-to taste
tamarind pulp-small lemon size
coriander powder-1 tsp
turmeric powder-1/2 tsp

TO TEMPER

oil-2 tbsps
mustard seeds -1 tsp
cumin seeds -1 tsp
curry leaves-1 sprig
ginger garlic paste(GGP)-1 tsp
hing/inguva -2-3 pinches
red chilli-3


Preparation

1.Wash okra finely and dry them using a fresh kitchen towel...Chop into 1 inch size pieces.Watch onion finely..Soak tamarind in sufficient water and squeeze out the juice...

2.heat a vessel or non stick pan with oil add ingredients which given under oil and saute well ..Fry onion also  for 1 minute and add chopped okra and mix it well.

3.After 2 minutes add chili powder,turmeric powder and salt.(you can add tomatoes here if you use)After 5 minutes add tamarind juice (around 1 cup).let it boil for 10 minutes in low flame.

4. Add coriander powder. boil it for 2-3 more minutes and turn off the flame.

5.serve hot with rice or roti...

Easy tamarind rasam for rice | Tamarind charu | andhra style tamarind rasam


pokpokPachhi pulusu is very simple and easy to do.but tastes great.with a small variations i did this...It is perfect with hot white rice along with any curry or fry

Ingredients

tamarind paste-2 tbsp
onion-1small
red chilli powder-1tsp
salt-to taste
fried sesame powder-2 tsps
cilantro leaves few -to garnish

TO TEMPER

oil-1tbsp
mustard seeds -1/2tsp
cumin-1tsp
dry red chilli-3 or 4
curry leaves-1o
hing/inguva-a pinch

Preparation

1.add 2cups of water in the tamarind paste and keep it aside.if you are using tamarind pulp soak in water for few minutes and using water squeeze out the juice
2.chop onions finely and add to tamarind water.
3.dry fry the sesame seeds and make it into a fine powder and add to the water along with red chilli powder.
4.now heat a kadai make temper using under tempering ingredients and to the water.
5.add salt+cilantro serve with rice.
5.keep it in fridge and drink. its like a sharbath too.

simple south indian hot tomato rasam/No dal spicy tomato rasam/indian version of hot tomato soup/step by step pictures


Rasam or charu  is a south indian popular spicy hot dish which prepares with juicy tomatoes and tamarind..Tamarind is the main ingredient which gives tangy taste to rasam and  here in foz mini tamarind pulp packets are available luckily.After sambar, rasam is very popular in indian cuisine where people often likes to serve in homes also even in occasions.Amma also prepares this tomato rasam fluently and after marriage I came to know that rasam is my hubby`s favorite indian dish.I took help of my friend vijetha to prepare this recipe in the beginning days of my cooking and later while talking with amma she also told some tips to make delicious rasam..Iam preapring this recipe from last 6 years and it`s a big hit..With 6 years of experience,I felt bore to eat it,but DH absolutely loves it always.and both MAHAS also joined with pappa..


When I went to buy tamarind pulp packets last 2 months back,I was disappointed on hearing that there was no stock.With dull face came back home and forgotten preparing rasam for 2-3 days,and next day DH asked about rasam.Un expectedly I thought to add lemon juice for tangy taste and it tasted good.You can`t compare it with tamarind but can have it.Is n`t that better choice??instead of stopping totally....I use MTR rasam powder and never tried home made power.But,have plan in mind to make some home made rasam powder,once after finishing this store bought,sure will try it and share it with you all.ihikhik 


Ingredients

tomatoes-3-4 big
green chillies-4-5
tamarind paste-2 tsp (or lemon juice)
dhaniya or coriander powder-1 tsp
rasam powder-1 tsp(must)
cilantro leave chopped -to garnish

TO TEMPER

oil-1 tbsp
mustard seeds -1/2 tsp
cumin-1 tsp
red chili-1 
hing/asafoetida/inguva powder-1/4 tsp
garlic cloves-3 or ginger garlic paste-1 tsp
curry leaves-1 sprig (but i don`t have)


Preparation
1.boil the chopped tomatoes with 1 cup of water until tomatoes turns pulpy for 5 minutes in high flame..turn off and let it cool.
2.Then squeeze tomato rasam by adding few more water to mushy tomatoes. or using potato mashes mash it and strain it. take this rasam into other bowl.
3.in a kadai add oil,cumin,mustard,hing,ginger garlic paste or garlic cloves chopped,turmeric powder,green chili chopped and saute finely.
4.add tomato rasam to this and let it boil.
When it`s boiling in high flame add rasam powder,salt,dhaniya powder and boil for 3-4 minutes in low flame..
5.finally off flame and add cilantro leaves..serve with rice and papad.



I took clicks two times in different days,so one is with cilantro leaves and other day I don`t have in cilantro leaves in hand,.

Its difficult to find green color chili in foz.So,you can see only red colour fresh chili in all my recipes..

Also you can use only dry red chili instead of fresh chili.

Corinader+rasam powder are important for the recipe.

Green Chick pea Lentil sambar/Easy south indian rasam recipes/Chana sambar with dal and tomato/Instant sambar recipes


Rasam is one of the comforting dish in south indian cuisine..It is DH favorite and even my two little kids also love it...I became like an expert in making tomato rasam after 6 years experience. DH n kids never feels bore t have it,but I was tired to prepare the same old recipe every day in kitchen..It`s difficult to satisfy the kids in food choices..When I prepared rice pulav and chana masala with chick pea both of my kids did n`t show much interest to have it..I cam to know that rasam is the only to reach there heart and decided to create a new recipes with chick pea in sambar category...I brought this green chick pea from india and here only available garbanzo beans..If you are pure south indian who likes to have rasam and sambar in meals daily,then try this for a change and healthy...It is a combination of toor dal,chick pea,tomato along with other common ingredients....If you have a stubborn kids who irritates you to eat healthy foods like mine,then definitely you must try this..

WHAT YOU NEED

Toor dal/kandi pappu-1/3 cup
soaked and pressure cooked chick pea-1/2 cup
salt-to taste
Ginger garlic paste(GGP)- 1 tsp
turmeric powder-1/2 tsp
tomato-1 big
cumin-1/2 tsp
oil-1 tbsp
mustard seeds-1 tsp
hing/asafoetida/inguva powder- 23- pinches
rasam or sambar powder-1 tsp
coriander powder-1 tsp
red chili-3-4
lemon juice-2 tsp
cilantro leaves few -to garnish


GREEN CHICK PEA HEALTH BENEFITS:

  • Heart Healthy: Regular intake of Chickpeas can lower LDL (bad) and total cholesterol. Garbanzos contain the significant amounts of folate and magnesium. Folate lowers the levels of the amino acid, homocysteine and strengthens the blood vessels. Studies have found chickpeas lower the risk of heart attack
  • For Women: Garbanzo contain phytochemicals called saponins, which can act as antioxidants. It could lower the risk of breast cancer, protect against osteoporosis and minimizes hot flushes in post-menopausal women.
  • Weight Loss: Due to high fiber content and low GI, chickpeas are excellent for weight loss diets. Salad with chickpeas are tasty and can keep you full longer, controlling the appetite.



HOW TO COOK

First,wash and soak chick pea if you don`t have readily in hand.Then pressure cook until done..

Wash and soak dal fro 20 minutes..Now combine dal and chick pea,1 cup of water and add turmeric powder,1 tsp of oil and pressure cook til soft and mushy..I cooked 15 minutes in medium flame.

After releasing air using potato masher,press the cooked dal+ chana to make it little bit soft and pulpy.. (it is optional.but I followed bcz of my kids who separates the solid food items while feeding )

Now turn on heat and place pan. in that add 1 or 2 tbsp oil n saute mustard seeds,cumin,hing,ginger garlic paste,red chili and tomato.Cook tomato turns mushy and add in mashed dal mixture..Adjust the water quantity here..

To this add salt,coriander+ rasam powders and mix well..You can replace rasam powder with sambar powder.

let it boil for 3-4 minutes in medium flame and turn off.Now squeeze lemon juice and fold it well..Serve hot with rice..
