Raw Mango Rasam | Green Mango Rasam | Mamidikaya Rasam | Pachhi Mamidikaya Charu | Quick and easy Veg side dishes for Rice


It is a very simple rasam with raw mango..In season can make this version often to enjoy mango taste if your Mango lover (like me).. better you should raw mango which is completely tangy in taste.So,before going to start,check out the taste and then proceed..It goes well with white rice along with some dry curry or with potato fry...


CATEGORY- VEG SIDE DISHES FOR RICE
PREPARATION TIME- 20 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

Raw (green) mango -1 big
salt- to taste

TO TEMPER/TADKA/POPU

Oil-2 tbsp
mustard seeds-1.2 tsp
cumin seeds-1/2 tsp
hing/inguva podi-2-3 pinches
dry red chili-4-5
curry leaves-5-6
cilantro leaves-few



HOW TO COOK

Wash,peel skin and chop mango into pieces..Pressure cook with 1/2 cup of water for 10 minutes in medium flame.

Turn off and let it cool,then using potato whisker mash it roughly.Now turn on heat under a non stick pan..Add oil and prepare "popu" by adding all the ingredients which mentioned above..

Saute well and mango mixture..Add around 3/4 -1 cup water to make it thin/for rasam consistency..Add salt as per your taste..

Turn off after 5 minutes..throw some cilantro leaves and serve hot with white rice along with some curry and chutney..

CATEGORY- RICE/ONE POT MEALS/SIMPLE RICE RECIPES FOR LUNCH TIME
PREPARATION TIME- 30 MINUTES
COOKING TIME- 20 MINUTES



WHAT YOU NEED

fresh cooked rice or left over rice-2 cups
brown chick pea-1 cup
tamarind pulp-small lemon size ball
cumin powder -1 tsp
sesame powder -2 tsp
oil-2 tbsp
cumin-1 tsp
mustard seeds-1 tsp
urad dal-1 tsp
red chili-3
green chili-4-5
hing-1/8 tsp
peanuts -1/3 cup



HOW TO COOK

Wash and soak chick pea and  pressure cook for 3 whistles.Soak tamarind for 15 minutes and squeeze rasam.Dry roast sesame seeds and cumin seeds separately and grind into fine powder separately.

Now turn on heat under a non stick pan and our in tamarind rasam..Cook for 5 minutes until turns thick.Add cumin powder and sesame powder after 3 minutes and cook..

Heat a vessel with oil and fry cumin,mustard seeds,urad dal,red chili,green chili,hing. Add in peanuts and saute for 2-3 minutes. Then  add in pressure cooked chick pea and mix well..

Now add in cooked tamarind mixture and mix..Cook for 3-5 minutes again in low flame and turn off.With this the basic mixture is ready..

Now add in fresh cooked rice or left over rice and combine every thing very well..Serve hot with curd and pickle.




 MAHAS NOTES

You can use tamarind paste if available.

Use basmati rice for a good look..

Cook tamarind paste until thick and then mix with chick pea..

You can use white chick pea (kabuli chana) and I used dry roasted peanuts here.

Sesame and cumin powders gives a nice flavor.so,don`t skip.

Though I have recipes in draft,nit feeling interest to write these days...Also,have some pictures in folders and every time post poning to that work.When new recipes taking place in blog,losing attention to work on ld posts..Hmm...When I asked about posting 2-3 recipes in a day few of my friends told that it may not work outs and can loose viewers.But,still I don`t know,whether it is a good idea to share more than 1 recipe in a day or not..Over all,iam getting totally confusion with these so many pictures..I would like to invite you all bloggers,which is very useful for me and otehr bloggers too..This kind of discussions and conversations may help us to grow more and makes the realtion much stronger I feel..Along with bloggers,I request all viewers and followers to write know your opnions too..:)


Coming to the recipe,,It is amma signature recipe which she cooks often,specially in busy days or when sudden guests came...It is a very simple spicy gravy which tastes good with white rice and even with rotis too..It was one of the bets dish of mom and I love her version..After a very long time I cooked this curry and thought to share in blog.Try it once and definitely you`ll love it.. ..Don`t forget to share your opions too..:)


CATEGORY- CURRIES/SOUTH INDIAN STYLE EGG CURRY RECIPES
PREPARATION TIME- 10 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

Boiled eggs-4-6
onion-1 very big
tomatoes-2-3 medium size
tamarind -lemon ball size or 1/2 cup juice
salt
red chili powder
cumin+coriander powders- 1+1 tsp
garam masala-1 tsp
turmeric powder-1/2 tsp
ginger garic paste- 2 tsp
cilanto leaves fresh chopped-  fist ful
Oil-2 tbsp
cumin-1 tsp
cloves-2
mustard seeds-1 tsp
cinnamon stick-1 inch
fennel seeds-1 tsp



HOW TO COOK

Keep ready the boiled eggs..Chop onion and tomato..prepare tamarind juice..

USEFUL TIP: BEFORE GOING TO BOIL EGGS ADD LEMON WEDGE AND SOME KOSHER SALT IN PRESSURE COOKER..LEMON WEDGE HELPS TO RETAIN THE WHITE COLOR IN THE BOTTOM OF COOKER AND SALT HELPS TO REMOVE THE SHELL OF EGG EASILY.

Now heat thick bottomed pan and add oil..Saute all ingredients which r given under oil and fry well.Then add onions and GGP and fry until change in brown color.Then add tomatoes and mix well.

Now add spice powders and mix nicely..Let it cook for 2-3 minutes and add tamarind jucie+ enough water for a gravy consistency..It depended on your taste..

According to the grvay quantity adjust spices and boil it for 5-8 minutes in medium flame..Then finally add eggs and corinader leaves..Mix well and cook for 3-4 minutes.Turn off and serve hot with rice or rotis.

Iam sharing this in DIVYA`S Youtoocancook food page..Divya is a gorgeous looking friendly girl.pink lover.. who loves pet animals{opposite to me ;)} who reacts on other problems,who tries to help others..I met her through YTCC and connected with FB..She completed 1yr 6 months of blogging  I think and interacted soonly with maximum co bloggers .Her SNC Event connected so many bloggers and recently  completed successful 1 year too..She presents recipes with gorgeous clicks..Even if it is a  simple recipe,she know the technique of presenting attractively...Her write ups always makes to feel wonder.
