SAMBAR the name itself gives a hungry feeling.
......a cup of rice with sambar with side dish of bhendi fry and a papad.Ah........what a meals na..
....so many variations are there in making of sambar..This is my version..........Usually AMMA
makes pappu charu(toor dal in tamarind water) with some vegetables like carrot,brinjal,tomatoes and onions..
....Especially the main two veggies are bottlegourd and drumstick....
....She says -these two gives the best taste for Pappu charu
....
Any way coming to my sambar recipe-check the recipe and let me how it is??...
..
Ingredients
toor dal-1cup
bottle gourd-1/4part
tamarind paste-3tsps
ghee-1/4cup
onions-2big
tomatoes-2big
red chilli-5
turmeric-1tsp
salt-to taste
cilantro-1bunch
curry leaves-5springs
jaggery-small piece
SAMBAR MASALA POWDER-2tsps
peel and chop the bottle gourd into finger size pieces.......
combine dal and bottle gourd and pressure cook for 2whistles.........
to the tamarind paste add 2cups of water and keep it aside............
heat a kadai with ghee and fry the mustard,cumin,fenugreek seeds........
add in onions chopped,GGP,red chilli, and fry well.
now add in tomatoes and cook til soft.......
add in turmeric,salt,tamarind water,jaggery and 1more cup of water........
add in this SAMBAR MASALA POWDER and cooked dal+bottle gourd mixture.........mash the
bottle gourd pieces little bit............
now boil this for 5-8 minutes.........
before going to off the flame add in cilantro,1tsp of ghee..........
hot n spicy sambar is ready.........serve with rice or idly...........
