this is a simple pumpkin curry which is cooked with spices and onion.Here we don`t need any typical masalas or ingredients..Even ,It does n`t needed tomato too.If you like can add but I suggest to don`t do it.Because already pumpkin is sweet in taste,so if you have tomato again it turns bit mushy and sweet in taste..

Okra rasam | Bendakaya pulusu | Bhendi cooked tamarind sauce with spices | Easy Veg Gravy recipes For Rice and Rotis
Okra rasam or bendakaya pulusu is one of my mother singnature recipe which she makes often..It is a very simple recipe and easy to cook in minutes..
Ingredients
okras-15 medium size
tomato-1 small (optional)
onion-1 big
red chilli powder-2 tsp (to taste)
salt-to taste
tamarind pulp-small lemon size
coriander powder-1 tsp
turmeric powder-1/2 tsp
TO TEMPER
oil-2 tbsps
mustard seeds -1 tsp
cumin seeds -1 tsp
curry leaves-1 sprig
ginger garlic paste(GGP)-1 tsp
hing/inguva -2-3 pinchesred chilli-3
Preparation
1.Wash okra finely and dry them using a fresh kitchen towel...Chop into 1 inch size pieces.Watch onion finely..Soak tamarind in sufficient water and squeeze out the juice...
2.heat a vessel or non stick pan with oil add ingredients which given under oil and saute well ..Fry onion also for 1 minute and add chopped okra and mix it well.
3.After 2 minutes add chili powder,turmeric powder and salt.(you can add tomatoes here if you use)After 5 minutes add tamarind juice (around 1 cup).let it boil for 10 minutes in low flame.
4. Add coriander powder. boil it for 2-3 more minutes and turn off the flame.
5.serve hot with rice or roti...

Raw Banana Curry | Aratikaya Koora | Easy curry recipes for rice | South Indian Curries | Vegan Curries
CATEGORY- VEGAN CURRY RECIPES/EASY CURRIES
PREPARATION TIME- 15 MINUTES
COOKING TIME- 20 MINUTES
WHAT YOU NEED
Raw banana-1 big
onion-1 small
ginger garlic paste (GGP)- 1 tsp
turmeric powder-1/2 tsp
sesame powder-2 tsp
salt-to taste
oil-2 tbsp
cumin-1 tsp
mustard seeds-1 tsp
urad dal-1 tsp
chana dal-1 tsp
mustard seeds-1 tsp
urad dal-1 tsp
chana dal-1 tsp
red chili-2
curry leaves-5
green chili-4
Wash and peel skin of banana.cut into small size pieces.Keep a bowl with some water and throw in salt little bit..now add in chopped banana pieces into this water.this helps to avoid the changing color of banana.
Heat a vessel..Add oil and add ingredients one by one which given under oil. fry well and add green chili, chopped onion and GGP..Saute until brown..
Now throw in squeezed banana pieces and mix..After a minute add in salt,turmeric powder and cook for 10 minutes in low flame by closing with lid.
In between Add 2 tbsp of water to avoid burning in the bottom and mix well.
Throw in sesame powder and mix nicely..Cook for 5 more minutes in medium flame (until curry turns dry) and turn off..
Serve hot with rice along with raita and bajji.

Cabbage Chickpea Curry | Cabbage Chana Curry | Easy Cabbage Curry Recipes
Ingredients
shredded cabbage-2 cups
chickpeas-1 cup
green chili-6
ginger garlic paste (GGP)- 1 tsp
ginger garlic paste (GGP)- 1 tsp
salt-to taste
coriander powder-1 tsp
cumin powder-1 tsp
cumin-1 tsp
mustard seeds-1 tsp
urad dal-1 tsp
chana dal-1 tsp
mustard seeds-1 tsp
urad dal-1 tsp
chana dal-1 tsp
oil-2 tbsps
Preparation
1.soak chickpeas overnight and pressure cook for 3 whistles.
2.heat a kadai with oil and saute cumin,mustard seeds,urad dal,chana dal..Add GGP and saute..Then cabbage and saute it for 5 minutes.
3.add salt,green chili mix once.now add cooked chana and cook for 2 minutes in low flame.
4.add few table spoons of water to avoid burning and cook for 5 minutes again by closing with lid..add in coriander&cumin powders too....Mix and cook for 5 more minutes..turn off and serve with rice or roti.....

spicy cauli flower stir fry/easy simple vegetarian gobi fry for rice n rotis
PREPARATION TIME- 20 MINUTES
COOKING TIME- 20 MINUTES
onions-1 medium size
Cauli flower-1small size
red chili powder-to taste
salt
turmeric powder-1/2 tsp
garam masala -1 tsp
ginger garlic paste-1/2 tbsp (GGP)
oil -2 tbsp
cinnamon stick-1 inch
cardamom pods-2
curd-1 tbsp
cumin-1 tsp
coriander+cumin powder-1/2 +1/2 tsp
cilantro leaves -few
HOW TO COOK
Cut small size florets and boil them in hot water for 5 minutes..Add salt and 2 pinches of turmeric powder in hot water first.
In a bowl take all spice powders (chili powder,salt,turmeric powder,GGP,garam masala,coriander+cumin powder),curd,GGp and prepare a marination..
Now add in boiled florets and marinate well for 15 minutes.
Heat a pan with oil and saute cinnamon stick,cardamom pods and cumin.Then saute chopped onions well.
Throw marinated gobi florets and mix well..Cook for 15 minutes in low flame n stir in between to avoid burning..
Then add chat msaala powder and mix well..Foldfew cilantro leaves if you have and combine it every thing finely..
After 2-3 minutes turn off and serve hot with curd n pickle.

Cauli flower carrot peas masala curry/easy sabji recipes/Spicy indian dry curry recipes
Hi..Friends..How are you all..How is blogging going on??Today Iam sharing a simple mixed vegetable curry which is a good combination with rotis.Rotis are our common dinner and I love to serve with diferent curries every time..Gobi peas curry is already a hit combination . in that I added few carrots and all spice powders gives nice flavors in the curry..Try it and serve with white rice or rotis..
PREPARATION TIME- 20 MINUTES
COOKING TIME- 30 MINUTES
Cauli flower -1 small
carrot-2
frozen green peas-1 cup
red chili powder-to taste
salt
turmeric powder-1/2 tsp
garam masala-1 tsp
coriander+cumin powders-1/2+1/2 tsp
ginger garlic paste (GGP)-1 tsp
onion-1
tomato-1 big
oil- 2 tbsp
cumin-1 tsp
black musatrd seeds-1tsp
urad dal-1 tsp
hing/asafetida-2-3 pinches
HOW TO COOK
Boil cauli flower florets,carrot pieces and peas in hot water.
Heat pan with oil and saute ingredients which mentioned under oil.Saute onions and cook til soft..
Then add cauli flower,carrot and peas...mix every thing..Add all spice powders and stir well..
Cook for 10 minutes in medium flame by closing with lid..stir in between to avoid burning..
Then add finely chopped tomato and kasoori methi .. combine every thing.Cook for 5 minutes again..
Add cilantro leaves and fold it well.turn off and serve hot with rotis n pulkas.

Cauli flower cashew Masala/Gobi Kaju Masala/step by step pictures/south indian curries for rotis n parathas

PREPARATION TIME- 30 MINUTES
COOKING TIME- 20 MINUTES
WHAT YOU NEED
Cauli flower-small flower
onion-1 medium size
tomato-1 big
cashews+almonds-5+5
coriander powder-1 tsp
garam masala-1/2 tsp
red chili powder-to taste
salt-to taste
turmeric powder-1/2 tsp
milk-1/2 cup
oil-2 tbsp
cumin-1 tsp
cinnamon stick-1 small inch
fennel seeds-1/2 tsp
kasoori methi leaves-1 tbsp
cilantro leaves-few
Soak cashews n almonds in water or milk for 15 minutes and grind into fine paste. Boil cauli flower florets in water for 5-8 minutes..
Heat pan with oil and saute cumin,cinnamon n fennel seeds.Add onions and fry till soft..Then add chopped tomatoes and mix..
Now add red chili powder,salt,,turmeric powder and combine every thing well.Cook masala turns mushy..Now add boiled cauli flower florets and mix once..
Now add cashew paste and 1/2 cup water..Cover with lid and cook for 5 minutes in medium flame..FInally add kasoori methi and turn off after 3 minutes..
Throw cilantro leaves and mix well.Serve hot with rotis or parathas..
