BOTTLE GOURD KOFTA GRAVY

Iam doing this BOTTLEGUARD COFTA GRAVY first time.actually my hubby is not big fan of the coftas and thick gravy dishes.sedih

He likes very simple and loose consistency dishes with rice..but i love all types of foods in veg..As a food lover have to try all the varities na??...that`s why i tried it..it was so tasty..when my hub tasted it said that Hmm.it tastes good...love

From now on wards try new varity of cofta dishes..i was suprised.any way iam happy and from now i can try some more this type dishes.rindu.......so..why late.here is my recipe list.

Ingredients
bottle gourd-1(3cups shredded)
tomatoes-3big
onion-1big
chilli powder-2tsps
turmeric-1/2tsp
salt-to taste
garam masala-2tsps
ginger-small piece
green chilli-1
turmeric-1/2tsp
garlic cloves-3
coriander leaves/cilantro-1/2cup
besan flour/gram flour-1cup(as needed to make coftas)
oil-2tsps
oil-for deep frying coftas
Preparation

making Coftas

peel and grate the bottle gourd..add little salt and water and bring it to boil..
after it cools squeeze the water and add besan flour,half chili powder and make into round shaped balls.
deep fry the balls in the oil til turns to golden..

Making gravy

chop the veggies and grind together to make puree....(tomatoes,onions,green chilli,ginger,garlic)
now heat a kadai with oil add tomato puree,chilli powder,garam masala,turmeric and cook on med heat til the puree starts leaving oil.
add 1-2cups of water and remaining salt let it boil to turn the gravy thick...
adjust the water in the gravy as per your taste.....
add the prepared coftas and cook it in low flame for 5 more min.
off the heat and add cilantro..
serve hot your yummy cofta gravy with rice.......

These days Iam bit slow in cooking new recipes.Not feeling interesting to cook and specially to click..I think I need some gap to refresh my mind ..Health effects a person mood and if the health is not good,can`t do any work with peaceful mind.Iam in the same position now..Even though active on fb,but not feeling fantastic with health disturbances...Struggles and strokes in life are natural which every one should face with guts,but unexpected  problems pulls us down and throws in depression..Iam trying to keep heart cool maximum.Hope,soon I will be fine same like before..I miss my bubbly character actually..It`s bit a personal..But this blog is like a member in my family..It gives a relief feeling when i share pains every time..


WHAT YOU NEED

lotus seeds/phool makhana-1 cup
onion-1
tomato-1 big
salt
red chili powder-to taste
turmeric powder-1/2 tsp
cashews-10
milk-1/4 cup
garam masala-1 tsp
kasoori methi-1 tbsp (optional)
ginger garlic paste-1 tbsp
Oil-2 tbsp (butter also can use)
1.cloves-2
2.fennel seeds-1 tsp
3.cumin-1 tsp
4.cardamom pods-1
5.cloves-2
6.staranise-small
7.bay leaf-1
cilantro leaves-1 cup


HOW TO COOK

1. Heat a pan with little bit oil and fry lotus seeds for 3-5 minutes....Remove and keep aside.soak cashews in milk and grind into paste after 15 minutes.

2. Now some more oil and saute all the ingredients from 1-7...Then add finely chopped onions+salt and saute tol soft..

3.add tomato puree aftre onions cooked well and mix well..add in spice powders and combine every thing well..Cook for 5 minutes in low flame..

4.Then  add pan fried lotus seeds and mix well..Cook this for 3 more minutes..

5.Now add ground cashew milk paste and fold it well in the curry..if the gravy loosks thick,add some more milk or water to make it and .finally add kasoori methi leaves and mix well.cook for 3-5 minutes in low flame...

6..Add cilantro leaves if you have in hand and turn off after a minute...Serve hot with rotis/pulkas/naan ..

Paneer butter masala/Ricotta cheese in buttery gravy/Paneer Makhani gravy for rotis/Vegetarian side dishes for rotis and parathas/step by step pitcures


Paneeru butter masala is one of the popular dish in indian cuisine..For vegetarians it is very a very comforting which is like a chicken or meat dish..Because of butter this is very rich in taste and of course high in calories.But,the creamy texture gravy and soft paneer cubes attracts you all very much to have it and definitely you can`t stop eating it...Choosing Juicy tomatoes,sauteing onions well is very important in this and don`t compromise on butter quantity..If you are not minded about weight reducing,then pan fry the paneer cubes with little bit spices in oil before going to add them in gravy..Naan,pulkas,rumali rotis or parathas are the best combination for this and also this works outs well in weekend parties..Grinding onion tomato mixture into puree is also important step which may takes some time,but it`s absolutely gives a nice look,like full cream milk in this.you can add some cashews or almonds while grinding onion tomato mixture fro rich taste..So,friends I wish  you all like this version.Try it and let me know..

PREPARATION TIME- 20 MINUTES
MARINATING TIME-OVER NIGHT OR 1-2 HRS AT LEAST
COOKING TIME- 30 MINUTES


Ingredients

cubed ricotta cheese/paneer-1/2 packet/130 grams
onion-1 big sliced
tomato-1 chopped
green chilis-2
chili powder-to taste
ginger garlic paste-1 tsp
salt-to taste
cumin powder-1/2 tsp
coriander powder-1/2 tsp
garam masala powder-1 tsp
turmeric powder-1/2 tsp
full cream milk-1 cup
dry kasoori methi-1 tsp
coriander leaves-for garnish

TO TEMPER

butter-2 tbsp
oil-2 tbsp
cumin-1 tsp
cloves-3
cardamom pods-2
cinnamon stick-1 inch
fennel seeds-1/2 tsp
bay leaf-1


Preparation

boil water in a vessel and add cubed paneer into it..Boil for 5 minutes and drain into colander.

now turn on heat and place pan. in that add 2 tbsp oil n cumin,cloves,cinnamon,cardamom,and saute for few seconds....

Add in GGP,onions,chili and saute well.. then add tomatoes and mix well..cook for 3-4 minutes in medium flame and turn off.let it cool then blend it into fine puree.

Now heat a pan with butter and add cumin,bay leaf.Then ground puree and mix well.In this add salt,chili powder,turmeric powder and kasoori methi combine well.add boiled paneer pieces and mix carefully..

Add milk coriander+cumin powders,garam masala fold it well..finally add cream and combine together.. Cook this for 3 minutes in low flame and turn off the flame 

Garnish with cilantro n serve with chapathi or roti......
