BOTTLE GOURD KOFTA GRAVY

Iam doing this BOTTLEGUARD COFTA GRAVY first time.actually my hubby is not big fan of the coftas and thick gravy dishes.sedih

He likes very simple and loose consistency dishes with rice..but i love all types of foods in veg..As a food lover have to try all the varities na??...that`s why i tried it..it was so tasty..when my hub tasted it said that Hmm.it tastes good...love

From now on wards try new varity of cofta dishes..i was suprised.any way iam happy and from now i can try some more this type dishes.rindu.......so..why late.here is my recipe list.

Ingredients
bottle gourd-1(3cups shredded)
tomatoes-3big
onion-1big
chilli powder-2tsps
turmeric-1/2tsp
salt-to taste
garam masala-2tsps
ginger-small piece
green chilli-1
turmeric-1/2tsp
garlic cloves-3
coriander leaves/cilantro-1/2cup
besan flour/gram flour-1cup(as needed to make coftas)
oil-2tsps
oil-for deep frying coftas
Preparation

making Coftas

peel and grate the bottle gourd..add little salt and water and bring it to boil..
after it cools squeeze the water and add besan flour,half chili powder and make into round shaped balls.
deep fry the balls in the oil til turns to golden..

Making gravy

chop the veggies and grind together to make puree....(tomatoes,onions,green chilli,ginger,garlic)
now heat a kadai with oil add tomato puree,chilli powder,garam masala,turmeric and cook on med heat til the puree starts leaving oil.
add 1-2cups of water and remaining salt let it boil to turn the gravy thick...
adjust the water in the gravy as per your taste.....
add the prepared coftas and cook it in low flame for 5 more min.
off the heat and add cilantro..
serve hot your yummy cofta gravy with rice.......

After shifting to foz Iam not visiting paraguay,Infact not interested to go often even.Why Iam saying this is,actually I like CDE (ciudad del este)city  in paraguay where we couple started out life together in an apartment which is very near to hubby deposite..We couple was very close to that flat and almost pur eyes filled with tears while leaving that sweet home.

BOTTLEGOURD CHANDAL CURRY/SORAKAYA(ANAPAKAYA) CHANGAPAPPU KURA


Here in a chinese shop we get bottle gourd,ridge gourd and bitter gourd..I like to use bottle gourd in sambar specially.But DH don`t likes sambar,so I didn`t make it often in my home.I cook it like curry by adding milk which is our telugu people`s famous dish.

BOTTLEGUARD HALWA/LAUKI HALWA/ Sorakaya halwa | Easy indian sweets


HI.guys.....good morningangel.........today iam posting B.G halwa (bottleguard).....usually i do carrot halwa in home..I know about lauki halwa..but never tried it...the day was came now to try the lauki halwa...senyumkenyit..
whenever i see the bottlegourd in the fridge i prefers to make sambar or curry with milk.peace.this time i decided to make this delicious halwa.......and it came out yummmm....adding khoya in the halwa is depends on your taste..it gives very rich taste to the halwa..but i didnt added...this method making halwa takes a little longer time....peluk...but it tastes delicious..

Ingredients
grated bottle gourd-4cups Or 1big
sugar-1/2cup
ghee-1/2cup
cashews&raisins-5+5
cardamom powder-1/2tsp
green food colour-a pinch(optional)i added
Preparation
choose tender bottle gourd.... peel the skin and remove the seeds..and grate it...
in a kadai add grated bottle gourd and sugar and stir continuously....
cook this on a low flame..while cooking the mixture it releases more water....
cook til bottle gourd turns to soft and water evaporates..it may takes 30-45mins.this time you can add the colour....
when the mixture is completely dry and bottle gourd is cooked add ghee and fry for few more mins til the ghee incorporated into the mixture...
add in cardamom powder and off the flame.....
fry the cashews and raisins in a tsp of ghee and add in the halwa...
serve hot or cold...

NOTE
You can skip the colour if don`t like....
instead of ghee you can add clarified butter....
you can add less sugar too...
you can add edible camphor too which gives nice flavour to the halwa....
