Quick and Easy Mixed Vegetable Dum Biriyani | Simple South Indian Veg Biryani With Step Wise Pictures | Easy One Pot Meals



CATEGORY- VEG MEALS/LUNCH/RICE
PREPARATION TIME- 40 MINUTES
COOKING TIME- 20 MINUTES



WHAT YOU NEED


Rice-1 cup
onion-1 small
potato-1small
tomato-1 small
cauli flower florets-1 cup
green chili-4-5
ginger garlic paste/GGP-2 tsp
french beans-3-4
green peas-1/2 cup (I used frozen)
biryani masala powder-1 tsp (or garam masala)

cumin+coriander powders-1/2 tsp+1/2 tsp
curd-2 tbsp
salt -to taste

To temper

Oil-2 tbsp
bay leaf-1 small
cumin seeds-1 tsp
cloves-3
cinnamon stick-1 inch
cardamom pod-1
cilantro+mint leaves-hand ful


HOW TO COOK

Wash rice  2 times and soak in water for 30 minutes..Now in a vessel take this rice and cook until rice done..

Heat a pan with oil and saute ingredients which mentioned under to temper for a minute.Throw onions+GGP and cook soft..Then add remaining chopped veggies,green chili,salt and cook for 5 minutes..

Add in biryani masala,cumin+coriander powders,few cilantro+mint leaves and curd.Mix well and cook for 3 more minutes or until all veggies turns soft.

Now add in cooked rice on top of veggies.spread it evenly.then add few more 
cilantro+mint leaves and milk which is mixed with food color.

Turn on heat under a tawa and put this vessel.Cook for 10 minutes and turn off. Serve hot with any pickle and raita..

Is n`t the recipe name sounds interesting??For me,it`s sounding very tempting u know...Don`t know about you all  opinions,but I feel vry bore to eat same white rice all the time...If you follwoing MLH regularly,then you may know the rice recipes how many I posted...So,if your taste also like me,You`ll love this recipe too..This is acombination of cabbage and potato with some spices and curd..Curd enhances the flavor of rice and it doesn`t tastes much hot too..Some people avoids cabbage,because of it`s smell..So,they can try this happily and If your kids or any one in family don`t likes cabbage try this.Surely they will love it... :)


CATEGORY- VEG RICE/MAIN COURSE/LUNCH BOX RECIPES
PREPARATION TIME-  15 MINUTES
COOKING TIME- 15 MINUTES


WHAT YOU NEED

Cooked white rice or left over rice-2 cups
cabbage finely chopped-1 cup
potato-1 big
green chili-2-3
curd/yogurt-1/4 cup
cilantro leaves- fist ful
turmeric powder-1/2 tsp
salt
Ginger  garlic paste/GGP-1 tsp
garam masala-1/2 tsp
Oil-2 tbsp
cumin-1 tsp
mustard seeds-1 tsp
urad dal-1 tsp


HOW TO COOK

Peel and wash potato..Chop finely into pieces..Heat pan with oil and saute ingredients which given under oil..

Then add potato and fry well..Now add green chilli,cabbage,salt and mix..After 2 minutes add curd and cook for 3-4 minutes in medium flame..

Then throw garam masala.fold ti well..Add rice and mix once again and finally if you have add cilantro leaves..

Serve hot with rasam or raita..


MAHAS NOTES

You can skip potato..

Add red chili pwoder along with chillies.  or avoid chillies.

Curd is important..If the curd is sour rice tastes too good..

Fresh Coriander leaves pilaf/Easy Indian Cilantro pulav/Indian Vegetarian lunch recipes/Cilantro veg pilaf without chili powder for kids/step by step pictures



I have lots of cilantro bunches in fridge.So,thought to try a rice dish.While browsing my MLH blog I came to know that already I posted a cilantro pulav recipe long time back.But,the pictures are very dull and not impressive..after cooking this immediately took my canon darling and clicked pics.If you are a regular visitor MLH,then you may know that iam a big admirer of green color..Choosing cilantro,mint leaves in bulk quantities is my one more weakness when buying vegetables and prefers this kind of rice varieties mostly more than the chutney versions.This cilantro pulav also one of my favorite in vegetarian rice category...It is very easy to make which may complete within minutes..Grinding the cilantro leaves with cumin and other spices gives a nice texture to pulav and even kids also love to have this without any fuss..If you are cilantro hater or if you have any family members who avoids cilantro leaves, cook this and serve.Definitely,they will love it.here goes the recipe details.........

  • Coriander seed oil has been found application in many traditional medicines as analgesic, aphrodisiac, anti-spasmodic, deodorant, digestive, carminative, fungicidal, lipolytic (weight loss), stimulant and stomachic

Ingredients

basmati rice-1 1/2 cups

TO GRIND

cilantro leaves-2 cups(tightly fitted)
mint leaves-1/2 cup
coconut powder-2 tsps
cumin-1 tsp
onion-1 medium size
dry kasoori methi-1 tsp
green chili-4
GGP/ginger garlic paste-1 tsp
cardamom-2
cloves-4
star anise-1 floret
cinnamon stick- 1 inch- 2 pieces

TO COOK

ghee or butter & oil -1 tbsp+1 tbsp 
yogurt/curd-1/4 cup
bay leaf-1 small
shahijeera/black cumin-1 tsp
red chili-1
garam masala-1/2 tsp
salt-to taste


Preparation

Wash and soak rice for 20-30 minutes.You can use normal rice too.But,basmati rice gives nice texture and good look.

take the ingredients which mentioned in the grind list and grind into a fine paste.........

now heat a thick bottomed vessel,kadai or pan and add in butter+oil......

add cumin,red chili,bay leaf and ground paste and fry for 3-4 minutes in medium flame by stirring.......

add in curd and mix well.....you can observe the nice aroma of cilantro while stirring.....

add in salt and  rice with enough water.(adjust the water level which depends on your rice
quality)

cook this until done by covering with a lid...when rice cooked completely off flame and serve hot with raita or tomato rasam......

Tofu capsicum rice with pepper flavor/easy vegetarian rice recipes/one pot meals/rice recipes for lunch box/Step by step pictures/Tofu health benefits


Hi...It`s 30 th today..How soon completed 6 months??only one more month to celebrate birthdays of my two kids..Yesterday,while searching for birthday special cakes Mahadev came near to me and a spider man cake pic attracted him..Within seconds he stated shouting for that cake and then i checked out few videos in youtube..I felt that with some cocentration and patience can make it if tries carefully..Let`s see...I have one month time to get some ideas and tips about decoarting.

Coming to the recipe,It is a easy tofu rice with capsicum and pepper combination...Actually,a very long time back I shared a capsium rice recipe..There I used mutli color capsicums and chili powder.But here for a variation I added fresh tofu cubes which are tossed with black pepper.If you want a plain rice use triple color capsicums and call it as bell pepper rice,other wise use tofu and cook with help of this step wise pictures..Here fresh black pepper powder gives a nice flavor and hot taste to the rice.I used freshly cooked basmati rice,but you can go with left over or normal rice too..It is a very simple rice and you no need tomatoes or any spice masala powders.This easy and quick rice goes well in lunch and also for lunc boxes.Try this and enjoy.. I had this rice with spicy potato fry and curd..It`s yummy..

PREPARATION TIME- 15 MINUTES
COOKING TIME- 15 MINUTES



WHAT YOU NEED

cooked rice-2 cups (I used basmati)
Tofu cubes-10 medium size 
green capsicum-1small
onion-1 small
black pepper powder-1 tsp
ginger garlic paste(GGP)-1tsp
salt-to taste
cumin powder-1/2tsp
bay leaf-1
mustard seeds-1/2tsp
cumin -1/2tsp
cloves-2-3
urad dal-1 tsp
coriander leaves-few(garnish)
oil-2tbsps




HOW TO COOK

take the hot cooked rice in a big plate and let it cool.
chop capsicum and onion.In a bowl take 2 picnhes pf salt and little bit pepper powder and toss tofu cubes.Keep aside thos for 15 minutes.
heat other fresh pan add oil.Then add cumin seeds,bay leaf,mustard,,cloves,urad dal and fry for 30 secs.
now add onion and saute for 1 minute and add capsicum and mix well.
Cook for 1-2 minutes in high flame and add GGP,and fry for 1 more min.
 now add tofu and mix well.
cook for 5 minutes in low flame.when it is almost done add cooked rice and coriander leaves.mix it.switch off the flame.
serve with any raita or fresh curd .
its tasty..easy one for lunch box too....





ABOUT TOFU:


1.Tofu is a curd made from the milk of pressed soybeans. It has a gelatinous texture and doesn't really have a flavor of its own. However, it will take on the flavor of anything you cook it with. There are many different varieties of tofu, but there are three main types usually found in grocery stores: firm, soft and silken.

  • 2.Firm tofu has a solid texture and tends to be higher in fat. This tofu is good for grilling or baking.

  • 3.Soft tofu has a softer texture than firm tofu and tends to be lower in fat. This type of tofu is good as a substitute for eggs or creamy cheeses like ricotta or cottage cheese.

  • 4.Silken tofu has a creamier texture than soft tofu and can be used to thicken up a smoothie or soup, or as a substitute for mayonnaise. In Japanese culture, silken tofu is typically eaten plain or with a splash of soy sauce.

5.No matter what type of tofu you choose, you'll still reap the nutritional benefits of this amazing food.
