Ingredients
brinjal-1big
tomatoes-3
green chillies-3-5
chopped onions-1/2 cup
tamarind paste-3 tbsps
crushed ginger-1/2 tsp
crushed garlic-1/2 tsp
chilli powder-1 tsp
salt-to taste
cumin powder-1 tsp
oil-2 tbsps
jaggery- 2tsps(opt)
cilantro-to garnish
TO TEMPER
mustard+cumin-1tsp
mustard+cumin-1tsp
curryleaves-1sprig
apply the oil to the brinjal and cook on the stove til it is tender...while roasting turn all the sides..
let it cool and peel the skin..cut into pieces and grind into a fine paste...
now chop the tomatoes and grind...
heat a kadai with oil and add temper ings and when it starts crackle add onions and chillies saute for a minute.....
now add crushed ginger and garlic and grinded brinjal puree.....cook it for few mins..3-4mins
now add in tomato puree,salt and chilli powder..cook for few more mins(around 3mins)
add tamarind paste and 1cup of water and let it boil...
when the gravy turns to thick add cumin powder and cilantro and off the flame..(here you can add jaggery If you want..)
your tasty brinjal tomato gravy is ready..
serve with rice or chapathi......
