GONGURA is a very rich source of iron and vitamins...........apart from pickle GONGURA MUTTON and GONGURA PAPPU(DAL) are the 2 more famous foods of gongura....

Coming to the recipe here i`l share some sweet words about amma.
....as i said in many other posts she is the best cook..and she makes pickles also simply superb.....
...whenever she decided to prepare the pickles that day we have lots work in the home...
....she makes pickles in a huge quantity.....amma is best especially in doing of mango pickle and this gongura pickle......
iam just a beginner in cooking means like a kinder garden student.....hehehe.....
....
I found these leaves recently in a vegetable bazar which is called as feria(in telugu called it as kuragayala santa) then i thought try this pickle.
....and finally i dared to do..
....iam satisfied and iam so happy with the taste of the pickle..
........it was just excellent..
each and every spoon of rice with pickle gives a yummy taste.i hope you people will like this one....
....so please try this and let know some sweet words from you...
...guys..........
gongura leaves-5bunches/aroundly 4-5cups
red chilli-15-18
salt-to taste
onions-1big
oil-4tsps+3tsps
fenugreek seeds-1tsp
urad dal/bengal gram-2tsps
chana dal/black gram-3tsps
mustard-1+1tsps
wash and clean the gongura leaves.........
spread the leaves on a clean cloth and let them dry....not under the sun light..........
after the leaves dried completely take in to a bowl.........
break the red chillies into small pieces and chop the onion very finely..............
now heat fresh and clean kadai with 4tsps of oil and fry the red chillies,fenugreek seeds and mustard seeds fry well and remove these into a mixy jar without oil...grind this by adding salt............
now in the same kadai fry the gongura well.......and let it cool for some time.......
take this into the jar which contained chilli mixture and grind it again coarsly...
now again heat a pan with 3tsps oil and fry the mustard,bengal gram and black gram and finally onions fry well in the low flame til onions turns to transparent.....
then add in grinded gongura mixture and mix well..
thats it ANDHRA FAMOUS GONGURA PACHHADI is ready to taste.............
serve with hot rice........
adding onion gives a different taste and the pickle smells good with fried onions.......
you can red chilli according to your taste....
