TAKKALI ANDHRA CHICKEN
One of the tasty version of chicken from my kitchen.........here it is...let me know how it is friends??????............
Ingredients

boneless chicken pcs-1/4kg
tomato paste-1cup
red food colour-1/4tsp(opt)
onion paste-1cup
green chilli-4
curry leaves-5
GGP/ginger garlic paste-1tsp
coconut paste-1tsp
gasalu/khus khus/poppy seeds paste-1tsp
garam masala powder-1tsp
chilli powder-1tsp
turmeric-1/2tsp
salt-to taste
pepper powder-1/4tsp
oil-1/4cup
water-2cups
cilantro-few leaves
wash the chicken pieces well and marinate with half spoon GGP,salt and turmeric and rest it for 20 minutes and pressure cook this for 2whistles with 1 1/2cups of water........
heat a kadai with oil and add chilli length wise,curry leaves...
now in the same kadai fry the onion paste, remaining half spoon of GGP and fry well...........
add in garam masala,salt,chilli powder,coconut paste,gasala paste,pepper powder and fianlly tomato paste too............
now add in chicken,food colour and 1/2 cup of water and cook in a very low flame........for 5-8 minutes and add cilantro.............
serve hot andhra chicken with rice.............

THOTAKURA VEPUDU/AMARANTHUS LEAVES FRY
thotakura/amaranthus leaves-2bunches
onion-2green chilli-3
salt-to taste
turmeric-1/4tsp
TO TEMPER
mustard-1tsp
cumin-1tsp
red chilli-1
urad dal/black gram-1tsp
bengal gram/chanaga pappu-1tsp
garlic pods-2
curry leaves-4
oil-3tsps
Preparation
chop onions into slices.slit chillies.......wash and chop the leaves finely........
heat a thick bottomed vessel with oil and add in tempering ingredients one by one and fry light golden in colour..........
now fry the onions and til transparent............add in salt,turmeric, and chopped leaves too.......
fry this for 5-6 minutes in low flame and off the flame.........
serve with rice or rotis.......

TRIANGLE ROTI
wheat flour-2cups+for dusting
salt-1pinch
oil-2tsps
water-as needed
oil-for pan frying
Preparation
In a mixing bowl add flour,slat,oil and by adding water make into a soft dough.keep this in rest for 30 minutes........
Divide the dough into equal size balls...........
Roll the dough ball into circle........and apply oil and sprinkle some flour.........
Fold this in half and again apply oil and sprinkle some flour ............
Fold this in triangle shape and roll again in the same shape.......
Heat pan add fry this roti on both sides ................
You can observe that roti will puff like a ballon............
Serve hot with any gravy or curd n mango pickle................
