EGG FREE BUTTER FREE LEMON CARDAMOM CUP CAKES/EGG LESS BUTTER LESS LEMON CUP CAKES/EASY CUP CAKES RECIPES/LEMON RECIPES/OLIVE OIL USING CUP CAKES
These are the lemon cup cakes with cardamom flavor..Also, it`s an egg less version and you can replace normal milk with almond or soya milk to make it complete vegan...On my own Idea I added some fresh cardamom powder and after baking cup cakes was smelled with both aromatic flavors..But,It`s an optional and you can omit it if you don`t like cardamom smell..It`s your choice.Try these lemon cup cakes next time and enjoy...

EGG FREE,BUTTER FREE WHEAT FLOUR CARROT CAKE WITH CHOCOLATE FROSTING
I changed the ingredients slightly but did n`t used eggs..So,you may call this eggless,but not a vegan cake...Chocolate frosting for carrot cake may sounds different,But absolutely It was my choice...After frosting I dipped the cake in desiccated coconut powder and again topped with some walnuts..
CATEGORY-BAKING/EGGLESS/CAKE/CARROT
PREPARATION TIME-20 MNS
BAKING TIME-30 MNS
Grated carrots-2 cup
brown sugar-1 cup
wheat flour-2 cups
baking powder-1 tsp
baking soda-1 tsp
cinnamon powder-1/2 tsp
milk-3/4 cup
salt-1/4 tsp
olive oil-2/3 cup
For frosting
Melted Chocolate-as needed
HOW TO BAKE
Preheat oven to 180 degrees C..Line a parchment paper in baking tin and apply some butter or oil to it..
Sift flour,baking powder,soda in a mixing bowl..In another one combine sugar,oil and milk...
Mix well until sugar melts in milk n oil..Now pout this in flour bowl and add cinnamon powder n salt..
Tip the grated carrots and give a good mix to batter...Pour this in a baking tin and bake for 25-30 mns..
Check after 25 minutes by inserting a tooth pick and if it came out clean turn off and tip the cake on a wire rack..
While the cake is cooling other side melt chocolate with 1 or 2 tsps of milk in double boiler method and stir well..after melting completely turn off and keep aside...
After some time check the cake n chocolate batter..If those two are in normal temperature start frosting the cake using a spatula with melted chocolate....
If you like carefully apply some coconut powder and sprinkle some chocolate shaves/semiya...
MAHAS NOTES
Replace wheat flour with APF/Maida..for measure please check in the original place.
I added few black raisins in the cake batter..You can add any nuts..
Carrot with choco frosting along with some coconut touch tastes really delicious and must try combination of these three..
I also dropped some white sugar balls which MAHADHIP is searching..
May be, my pictures are not in good quality,but it tasted simply superb..
I highly votes this cake..Bcz,It`s egg free,butter free and used wheat flour..
HE IS VERY EAGER TO CATCH THOSE SUGAR BALLS
IT`S MAHADEV AND MAHADHIP
