Like cakes and cup cakes I don`t bake much cookies..It`s just because of butter quantity..Yeah!! The butter amount makes me shiver to try cookies recipes..In fact my kids not a great lovers of cookies.Recently realized that I did n`t have baked any cookies these days..So, last few weeks back while baking a chocolate cake, thought to bake some cookies using black raisins..So,this is the result of my work finally..
These cookies are rich in flavor,with real butter and are full of sweet taste raisins..Don`t over bake these,other wise becomes so hard.Addition of milk is important to get a right dough consistency in this recipe..So,very carefully add milk for perfect cookie dough..Before baking you can keep the tray,in fridge for 10-15 minutes and then bake..This step helps to retain the shape of the cookie instead of crackling..Instead of store bought goodies this type of home mades are much better for kids.So,try these soon and enjoy with your family..PREPARATION TIME- 15 MINUTES
BAKING TIME- 20-25 MINUTES
2 cups - all purpose flour
2 teaspoons - baking powder
1/4 - teaspoon salt
3/4 cup - unsalted butter, at room temperature
1 cup - firmly packed sugar
1 large egg -at room temperature
1 teaspoon - vanilla extract
3-4 tablespoons - milk
1 cup - black raisins
Preheat oven to 375 degrees F (190 degrees C). Butter or line two baking sheets with parchment paper.
In a bowl,beat in eggs,butter,vanilla,sugar and whisk together. Then add flour, baking powder, and salt.. Scrape down the sides of the bowl as needed.Add few table spoons of milk to make a soft batter.Then add raisins and mix until combined..
For each cookie, drop about one tablespoon of batter onto the prepared baking sheet, with some distance. Bake the cookies for about 12 -14 minutes, or until the tops of the cookies are still soft with just a touch of color, yet the edges are golden brown. Remove from oven and transfer the cookies to a wire rack to cool.
