Hi..friends How are you all?Hope every one enjoyed weekend happily by forgetting tensions and problems for a while..but for me,It was a hectic weekend for me with full of cold n headache.Today feeling much better and started week with full of hope.Coming to the recipe,This is an easy yet rich gravy of baby corn and peas..
It goes well with any kind of flat breads and the main thing in the recipe is nuts paste..It is the key ingredient in the recipe which takes the whole credit..baby corn and peas,both are handy to try out different gravies or curries and this is one of the very good combination gravy which I experimented according my Ideas.Even the process of dish also takes very less time and it`s a helpful recipe for you to attempt when sudden guests visits home..I served this with rotis and enjoyed..

PREPARATION TIME- 20 MINUTES
COOKING TIME- 20 MINUTES
WHAT YOU NEED
onion-1 big
(canned)tomato puree-1/2 cup
(frozen) green peas-3/4 cup
(I used canned)baby corns-10 small
3% fat milk-1/2 cup
red chili powder-to taste
salt-to taste
garam masala-1 tsp
coriander+cumin powders-1+1/2 tsp
ginger garlic paste (GGP)-1/2 tbsp
turmeric powder-1/2 tsp
coriander leaves-fresh finely chopped (fistful)
Oil-2 tbsp
cumin-1 tsp
mustard seeds-1/2 tsp
fennel seeds-1/2 tsp
cloves-3
cinnamon stick-small
To grind into fine paste you need
cashews-5
almonds-5
pistachios-15
(You can use few more if you want rich taste and also adjust according to baby corn+peas quantities)
HOW TO COOK
If you use,fresh baby corns boil for 5 minutes in high flame and strain them.Then chop into 1 inch size pieces...Also,if you are using fresh peas boil them in hot water for 5 minutes..
Here,I used frozen peas and bottled baby corns..So,I used directly..Soak nuts in milk for 15 minutes and grind into fine paste.
Chop onion finely and now turn on heat,put vessel..Saute cumin, fennel seeds, cloves,cinnamon stick well and add onions,GGP now..
Fry until onions turns brown and add tomato puree/paste..Mix well and cook this for 3 minutes in low flame and add in ground paste.
Then add all spice powders and mix once...Now, add baby corn+peas and mix every thing nicely.
Close with lid and cook for 5 minutes in low flame,and add 1-2 tbsp milk..Again cook for 3-5 minutes and turn off...
(If you used boiled baby corns,peas cook for 5 minutes in medium flame..add milk and cook for 5 more minutes...)
Serve hot with rotis,pulkas,naan..:)
