After finding baby corns in foz,Iam trying new combination of gravies every time..With baby corn can create different combinations of one pot meals and gravies too.Also green peas are the best fusion which works out very well with all kind of vegetables...This is one of the finest gravy of baby corn and peas which goes well with rotis and pulkas.
Also,you can serve with simple pulav too,but I feel It tastes good with rotis actually..I have posted long time a simple gravy of baby corn with peas combination..In this,I named it as korma,because here I added coconut and cashews brings a rich taste to the gravy..If you loves baby corn try this new version of gravy and serve hot with rotis and enjoy..
PREPARATION TIME- 20 MINUTES
COOKING TIME- 20 MINUTES
WHAT YOU NEED
onion-1 big
tomato puree-1/2 cup
peas-3/4 cup (I used frozen)
baby corns-10 small (I used canned)
red chili powder-to taste
salt-to taste
garam masala-1 tsp
coriander+cumin powders-1+1/2 tsp
ginger garlic paste (GGP)-1/2 tbsp
turmeric powder-1/2 tsp
coriander leaves-fresh finely chopped (fistful)
Oil-2 tbsp
cumin-1 tsp
mustard seeds-1/2 tsp
fennel seeds-1/2 tsp
cloves-3
cinnamon stick-small
TO GRIND
Coconut -fist ful
cashews-6
khus khus/gasagasalu-1 tbsp
HOW TO COOK
If you use,fresh baby corns boil for 5 minutes in high flame and strain them.Then chop into 1 inch size pieces...Also,if you are using fresh peas boil them in hot water for 5 minutes..
Soak Coconut,cashews,khus khus in 1/3 cup of water for 10-15 minutes and grind into fine paste..keep aside.
Here,I used frozen peas and bottled baby corns..So,I used directly..
Chop onion finely and now turn on heat,put vessel..Saute cumin, fennel seeds, cloves,cinnamon stick well and add onions,GGP now..
Fry until onions turns brown and add tomato puree/paste..Mix well and cook this for 3-5 minutes in low flame.
Then add all spice powders and mix once... After 2 minutes add in ground paste and mix well..Cook for 2 minutes in low flame.Add 1/3 cup of water and Then add baby corn+peas and mix every thing nicely.
Close with lid and cook for 10 minutes in low flame.Cook for 3-5 minutes again and turn off...Serve hot with rotis,pulkas,naan..:)
