Indian cuisine represents various spices and masalas. We can`t even imagine Indian dishes without the wonderful whole spices and flavoured masala powders. Whole garam masala ingredients take first place in dum biryani recipes and in non-vegetarian dishes. I like to use whole ingredients in cooking as it is instead of grinding them into a powder.

HOME MADE GINGER GARLIC PASTE/BASICS/ ALLAM VELLULLI PASTE/HOW TO USE GINGER SKIN
This Post don`t need any big Intro...But still every one have their own style in cooking and in making home mades.I really like to share my methods with you all n feeling really happy about this. Thanks to Blog Baby:) ..
Iam not a great experienced girl in cooking.Can u believe??Even once in a week also I did n`t helped AMMA in kitchen.of course!!! She never scolded me for that.Even I was also very busy with college and tution. Yes.after college I took classes (5pm to 8pm)for children.I started teaching when I was in 10th n continued upto degree with AMMA support.After completing my final exams in degree, I got married in the same month and came to Brasil..Still Moms of those kids remembers and asks about me.{AMMAalso always tells this;)}
OK..Where we are??!!! Got It..Coming back to the cooking,So,Finally what I want to say is Iam a lazy girl(some times/but argues lots)AMMA always prepares GINGER GARLIC PASTE in bulk quantity by adding salt and turmeric n stores for a long time.. still I remember the scene that AMMA use big besan(steel bowl) to wash ginger by rubbing with hands she tries to remove the red sand which the seller(s) applies.(Don`t be shock. It`s true). And coming to the garlic she just applies some oil to garlic and pour those into a bag n just gives few strokes by hitting on floor.when the time you check garlic will be crush little bit. With this method we can peel the skin very easily..After Completing the garlic amma fingers smells with hard garlic flavour and pains allot..Finally, she grinds n mix salt n turmeric.she told that adding these two will keep the flavour GGP always fresh, gives good look and also helps in storing..I too believe this..In my opinion MOMS are the first n best teachers for us..So,In the same way Iam just trying to follow her..And this is also A very useful one which I learned from my Angel Lady..
AMMA you are the best.Love you for ever and ever!!!!!!
CATEGORY-HOME MADES/GINGER GARLIC PASTE
PREPARATION TIME-1HR
WHAT YOU NEED
GINGER-1/2KG
GARLIC-1/2KG
TURMERIC-1TSP
SALT-1TSP
HOW TO MAKE
Wash twice ginger and using a sharp knife or peeler peel the skin..I always use sharp knife. If you use peeler you may lose some ginger too.knife helps to remove the skin very finely.Try it out next time.
Don`t throw away the ginger peel.you can use it..(CHECK BELOW FOR INFO)
Using a sharp knife cut ginger into small pieces and keep aside..
Apply some oil to garlic and pour those into bag and give some strokes by hitting..Now you can peel the skin very easily.
Before that,Apply some oil to fingers n palms and peel the garlic skin..cut into fine pieces..Chopping into fine saves your time while grinding.
So,try to chop ginger n garlic into same size(small)
Take ginger n garlic in same quantity and grind into paste.(See the pics)..I don`t grinds into very fine and smooth paste. If you like can do.
After that take the GG paste into a bowl and add turmeric and salt..Mix well with spoon....
Store this in a dry glass jar or bottle/plastic box or bottle..
