This is another banana bread which I baked out recently. It came out so good with a spongy texture and fluffy inside. Use well-ripened bananas for pure sweet taste which can`t compare with sugar. This time I tried brown sugar which was so dark in colour and too sweet in taste.
Grandma`s banana bread recipe calls for all-purpose flour and butter so I went with all-purpose flour but replaced butter with olive oil. Mix gently every time when you add ingredients for soft textured bread. Walnuts and raisins are my choices in the recipe so you can use any one of them or skip those two. If you prefer banana bread for breakfast like me then this is also one of the best recipes to try.

WHAT YOU NEED
Ripen bananas-3 big size (I used 4)
Unsalted butter or Olive oil-1/2 cup
Brown sugar-3/4 cups
Eggs-3
All-purpose flour-1 1/2 cups
Walnuts-1 cup
Raisins-1/2 cup
Baking soda-1/2 teaspoon
Vanilla essence-1/ 2 teaspoon
Salt-1/2 teaspoon

In a mixing bowl, mash bananas, break eggs, add oil, sugar and mix well.
Now add baking powder, baking soda, flour, salt and mix everything finely. Then add walnuts, raisins and stir gently.
Preheat oven to 180-degree centigrade. Take a bread loaf pan, apply oil and dust with flour finely.
Pour the batter and place it in the oven, bake for 30 minutes and check out with a toothpick. If it comes out clean, bread is ready to turn off the oven otherwise bake for 10 more minutes.
Once when the bread is done turn off the oven and rests the bread loaf at room temperature for some time.
Slice it and serve with hot coffee or milk.
