So,one fine day there was a small amount of cooked lobia in fridge along with spinach bunch..So,got an idea of mixing both and cooked like a gravy..It`s a simple gravy with very common ingredients like onion,tomato puree and spices of course..The process is so easy which may need around 15 minutes if you set every thing ready..I cooked it as per my taste,if you like experimenting make changes according to your taste for a change..This dish goes well with chapathi or roti ..Cook this combination next time and enjoy hot plate..

WHAT YOU NEED
Oil-2 table spoons
Cumin seeds-1/2 tea spoon
Mustard seeds-1/2 tea spoon
Curry leaves-few
Onions-1 small
Ginger garlic paste-1 tea spoon
Fresh spinach/palak- chopped -1 medium size bunch or 2 cups tightly packed
Red chili powder-2 tea spoon
Salt-to taste
Turmeric powder-1/2 tea spoon
Pressure cooked lobia-1 cup
1 cup of water
Coriander powder-1 tea spoon
Garam masala-1 tea spoon
HOW TO COOK
Heat a non stick pan with oil.Saute cumin seeds,mustard seeds,curry leaves and saute for few seconds.. Add finely chopped onions,ginger garlic paste and cook for a minute.Add finely chopped spinach,mix well and add tomato puree.Mix and cook for a minute..Add red chili powder,salt,turmeric powder and stir well.After 2 minutes add pressure cooked lobia,add a cup of water.Cover and cook for 10 minutes in medium flame..Finally add coriander powder,garam masala and stir gently..Turn off and serve hot with chapathi..
