I like one pot meals..This kind of mix ups saves times and no need any curries or gravies for combinations..My two little kids(of course..they are just below five years kids!!) are not fond of pulavs and for them I prefers white rice every day and then for we couple mix it ups with mutliple vegetables and nuts..In the same way I prepared this and it tasted very spicy and yummy..palak goes well in any recipe and rice versions tastes much better I feel...To match spinach bunch I added fresh green peas and mixed up some fresh cooked rice..It tastes best when served hot with yogurt...In the recipe, red chili powder gives better taste more than green chilis. WHAT YOU NEED
cooked fresh rice-2 cups(can use left over too)
onion-1 small
Spinach chopped-2 cups loosely packed
fresh green peas-1 cup
red chili powder-1 tsp
salt-to taste
garam maslaa-1 tsp
ginger garlic paste-1 tsp
turmeric powder-1 tsp
dried kasoori methi-1 tbsp(optional)
coriander powder-1/2 tsp
cumin powder-1 tsp
TO TEMPER
oil-1-2 tbsp
hing-1/8 tsp
mustard seeds-1 tsp
cumin-1 tsp
urad dal-1 tsp
chana dal-1 tsp
curry leaves-1 prign
HOW TO COOK
Boil green peas in hot water for 5-8 minutes and drain in colander.Heat a thick bottomed vessel with oil and saute all ingredients which given under to temper..
Now throw in chopped onion with little bit of salt and cook til onions turns soft..
Now add in chopped palak and boiled peas mix well every thing..
Throw in all spices and cook for 5 min low flame..
once every thing looks soft and little bit mushy add in rice and mix gently..
turn off flame and add garam masala.serve hot with any gravy or raita..
