Use thick coconut milk and cook in low flame after adding rice which avoids burning from the bottom. This pulao is easy to cook, tasty with coconut milk flavour. Serve hot with raita which makes a perfect match.

HOW TO COOK
Wash chicken twice, keep aside. Wash rice twice and soak water for 30 minutes. In a bowl, take red chilli powder, ginger garlic paste, salt turmeric powder, yoghurt, lemon juice, oil. add chicken, mix gently and rest it for 1-2 hours.
Now take a thick bottomed vessel, add oil. Throw in whole garam masala ingredients, saute gently then add in sliced onions and fry for 2 minutes in medium flame.
Now add marinade chicken, stir gently and cook for 10 minutes in low heat.
Now add finely chopped mint, coriander leaves and mix once. Then add coconut milk, water and stir to mix everything evenly.
Now add soaked rice, stir carefully and let it cook in medium flame with a lid. When water evaporates, keep the flame in low, put a tawa (pan) on heat and keep this vessel. Cook this for 10 minutes in low flame and turn off. Serve hot with raita.
